i need ideas and the recipes for a healthy light dinner that's easy, and preferably meatless.

need ideas soon, want to eat within an hour haha! :)

Zucchini (Green Squash) - Baked or Roasted
Preparation

We usually select the quantity of zucchini based upon whether we are having it as a side dish or a main dish. Begin by washing the zucchini and removing the stem and flowering ends.

If you have a large zucchini, cut into four inch lengths and then slice each piece lengthwise into 1/4 - 1/8 inch slabs (see photo above). If you want to eat the zucchini as finger-food, we suggest cutting the slabs in half (lengthwise).

If you have small zucchini, cut them lengthwise (see photo below).

Place the zucchini pieces on a nonstick baking sheet for cooking in a conventional oven, or in an uncovered glass baking dish if cooking in a microwave oven.

Sprinkle on some oregano and black pepper to taste, and bake at 350-400 degrees in a conventional oven or on high in a microwave oven

When the zucchini begin to dry out on the surface, remove from the oven and serve.

Baked Peaches with Honey
INGREDIENTS:
Approx 1 tsp margarine
4 peaches, sliced in half
1/4 cup honey or agave nectar
1/4 tsp ginger
1/4 cup chopped pecans (optional)
PREPARATION:
Pre-heat oven to 400 degrees. Lightly grease a baking pan or sheet with the margarine.
Place the peaches in the baking pan, slice side up. Drizzle with remaining ingredients.

Bake for 13 to 15 minutes, or until peaches are tender.

Serve topped with whipped cream or ice cream if desired

Here's some of my favorites:

Linguini with fresh tomatos, basil, artichoke hearts and shaved parmesan cheese

Sauteed chicken tenders with grapes and feta, served with angel hair pasta

Sauteed turkey cutlets with capers and dijon mustard, served with roasted sweet potatoes topped with a candied ginger and pecan crumble

Grilled lean ground beef topped with sauteed mushrooms and a dijon -blue cheese butter

Each item can be made with little or no fat, olive oil, and the robust flavors require smaller amounts of the items (such as dijon or blue cheese). Serve with roasted veges or your favorite salad and you have a nice meal!
