I'm making maccaroni and cheese tonight for dinner and want to freeze half to use at a later date. Anyone know how to do so?

You're dancing a fine wire there, most pastas and cheese sauces don't take well to freezing......some people can't tell the difference, but I think in the freezing process and the thawing, there are textural changes that occur in some foods that are frozen.........I know, you're probably saying to yourself, they sell frozen mac & cheese, but these products are specially processed with different ingredients that are not available to the general public.........As far as the baking the freezing or freezing then baking, you can do either.......if you freeze the dish prior to baking it, you 're going to have to allow an additional 20 to 30 minutes to the total cooking time....Enjoy!!

It works either way. But next time make a smaller cassarole and just freeze the cheese sauce. Pasta isn't as tasty after being frozen, but it is still fine.

Cook and then freeze. Especially with mac and cheese. If not, you would be freezing hard pasta shells. I hope this helped and good luck. I hope you enjoy it.

Aint no point in freezing mac and cheeze, just place it in an airtight container and it will last a week or more. Freezing it will greatly deminish the flavor and just be a waste of space in the freezer.

Cook then freeze.

If you are planning to freeze it before cooking it, then you could just leave it raw in the cabinet / refrigerator.

Cook it all first, but be sure the pasta is not cooked all the way, leave it a little hard so that when you reheat the noodles aren't gooey.
