You can always make carrot cake. Not very healthy but very tasty :)

Take a whole onion and chop it up, put it in a buttered baking dish with the baby carrots and a large can of yams and juice too, just judge how much you will need, this will cook the carrots and be the end sauce, so use your judgment. Add some brown sugar over the top and pats of butter, dotted here and there, add a little cinnamon and nutmeg sprinkled over everything to kick up the spicey-ness. Cover with tinfoil and bake at 350 for about 45 minutes or so. Serve as a side dish with BBQ chciken and a salad.
For soup:
Use water or vegetable stock, not too much though because you will be adding a can of evaporated milk after the carrots are done cooking, cook carrots til tender. When the carrots are done, take about half out and puree or smash them up fine, put them back in the pot, add that can of evaporated milk and a dollop of butter, add some salt if you want it salty or salt and a little brown sugar if you want to bring out the sweetness of the carrots, when serving, sprinkle a tiny bit of cinnamon on each serving and float a little cream or pat of butter on top. Serve with crusty rolls.

Even if you don't like carrots their are sooo many recipes to be made with them. You mentioned a soup I found a great web site that has a recipe for spicy carrot soup. I enlisted it below. What's Up Dock. Have fun cooking.

This is what I do, you need to make a Spaghetti, Sauce and as you let the sauce simmer (yes, you can use Jared sauce such as Ragu) put the carrots in the sauce, this will naturally sweeten it up a bit, and it will make it 3 times more healthy! You can't even taste the carrots in the sauce, cause were the sauce has been simmering, it softens the carrots and makes them unnoticeable!

I have hidden carrots in my pot roast for years.I get the mat and everything else in the pot.Then about 30 mins later I add my grated carrots to the pot.Then cook til meat is tender.The carrots make a real thick gravy.My kids never knew til they were grown and ask for my recipe...

Carrot cake!! You grate the carrots into the cake mix and you get to eat carrots without the crunchy orange thing going on. It's the best way!

Make the most of the flavor and texture of them. Saute in a pan with butter, brown sugar, ginger...kind of like the caramelized carrots you were describing. They pair well with other baby veggies, if you can find some.

Ingredients (serves 4)
1 tablespoon olive oil
1 leek, halved lengthways, thinly sliced
6 carrots, peeled, chopped
4cm piece ginger, peeled, grated
2 cups salt-reduced vegetable stock
2 cups water
light sour cream, dill, and toast, to serve
Method
Heat oil in a large saucepan over medium heat. Add leek, carrots and ginger. Cook, uncovered, stirring occasionally, for 8 minutes, or until vegetables start to soften.
Add stock and water to saucepan. Cover. Bring to the boil. Reduce heat to medium-low. Simmer, covered, for 20 minutes, or until carrots are very tender.
Remove from heat. Set aside to cool slightly. Process or blend soup until smooth. Return to saucepan. Heat over medium-high heat until hot. Season with salt and pepper.
Ladle soup into bowls. Top with sour cream and dill. Serve with toast

A very simple way to prepare them is:
1-stick of margaring
1-cup of brown sugar
1/4cup orange Juice
Melt margarine and brown sugar stiring until brown sugar melts and is smooth.
Add orange juice.
Heat until hot then pour over carrots
Cover and bake in oven until carrots are soft! (not mushy)
Enjoy!!

if u do what LeeCee did, then they are so delicious. plain carrots are disgusting, but if there is brown sugar with them then they taste absolutely delicious.
