The PS3 parts are the same (i.e. you'll play the same PS3 game if you use it on any of the different types).
The difference is in the added features.
The 20/60/80 refers to the size of the hard drive (used for game saves/demos/music/etc)
The 20GB version also doesn't have Wifi or memory card slots (not for games, but like those that cameras, etc use) at the front.
The 80GB has slightly different backwards compatibilty for older PS2 games which means some might not work.
You can always change the hard disc later for a bigger one.
-To complicate things a little further, they've just announced a new 40GB model (in the UK at least) which is slightly cheaper but has no backwards compatibility at all.

ok here is the thing.
20gig= obsolete they dont sell em anymore they were a bad idea.
60gig= great system i have one identicle to the 80 gig with the exepton the HDD is 20gig smaller now costs as much as the 20gig used to $500
80gig= costs as much as the 60gig used to $600 but ti is far worth it. the graphics agre the same on both because its the same lazer and same outputs just a bigger HDD. and you save a ton because
60gig serial ATA laptop HDD (the kind that go in the PS3) are $48 to $70
and an 80gig serial ATA laptop HDD range form $52 to $90
and it comes with a $60 game so if you buy the 60 gig and upgrade to the cheapest 80gig and buy the game that comes with it you wil spend $612 (thats 12 dollers you could spend on food and a whole hell of a lot less work)
get the 80gig.
also only caring about graphics is a horrible idea. form over function is a bad way to look at things. i would get a functional system and form will come with it. thats why 360 sucks so bad. people wanted the good graphics over the ps2 and they got the red ring of death to show for it.
trust me you want the 80 gig in the long run

the graphics are gonna be the same on all 3 systems. there are some differences. the 20 gig doesn't have wi-fi, or memory card slots. the 60 gig model has a chip in it that allows you to play almost all of the ps2 games on that model. the 80 gig doesn't have that chip, so they have to download up dates like xbox live does theirs. but graphically.......the same, no matter what model you get

the 20 and 60 gig can play ps2 video games the 40 and new 80 gig can't play ps2 video games yet they could play ps1 video games (The previous 80 gig could desire to play ps2 and ps1 video games however the single in shops now can't) the 20 gig does not have inbuilt wifi the 20,40 and 60 GB fashions have all been discontinued

well i say graphics wise no, but the 60 gb ps3 has better emulation then the 80 gb so if you already have one that's great but if your looking to buy one buy a 60 gb ps3 before it runs becuz then you will be able to play any ps2 game you want to.....oh yea with that $100 bux you save go buy a 160gb hard drive......that's what i did and if your gonna take this advice the hard drive has to be a 2.5'' sata hard drive!

I have only one thing to add to those great answers - Emotion Engine chip in 60GB version for backwards compatibility with PS1/PS2 games is only in US and Japanese versions. European version didn't have that chip since the beginning.
