The army reserve called me the other day offering me a deal. I told him I want to be trained in engine mechanics and he said guaranteed on paper ill be trained in that. Is this total BS or whats the trick on this. Is it a guarantee through reserve or guard?

Your MOS can be set in stone. It is part of the enlistment contract.

About the only way to not get it is if you fail a security clearance or fail a specific requirment, then you go needs of the Army, but as a mechanic, you dont need a clearance or anything.

They will tell you whatever it takes to get you in. Once there...they put you where they need you. I have a friend who is 51 years old and in the reserves. He was a tank mechanic. He is now on his second tour in Iraq as a security policeman. Think long and hard before you commit to anything.
