"To touch the sky" is another way of saying "To reach for the sky" - or simply put, to set your goals as high as you possibly can with the intention to go as far and as high as possible with your successes. Or to find yourself uplifted by an experience that you feel brings you to a higher plane for that moment of time. Not necessarily literally, but emotionaly or spiritually.
