The rooster is necessary if they are wanting fertile eggs. Also if they free range, the rooster does act as protector to the flock.

Roosters are fun to have around and are interesting to watch.
Free range hens do better with a rooster or two to watch for predators.
They love to listen to the roosters crow. I know I do.
The roosters are to be eaten.
They got the roosters when they were just chicks and don't have the heart to get rid of them now.
Those could be some of the reasons. I'm betting that it's the later reason. Even if you order all female chicks you often end up with a rooster or two. People get really attached to their chickens. There's even a chicken rescue in Minneapolis called Chicken Run Rescue. They only allow their rescued chickens to go to homes as house chickens as far as I understand.

Roosters usually keep an eye on the flock and are a bit protective, plus if your neighbors sell and/or want chicks then they would need to have a rooster on hand.
If you really want to know why they keep roosters, maybe you should go ask them.

When I was a kid we used to do the same thing...the hens did not need the roosters for their job of supplying eggs daily but we sure did like eating them (the roosters.)

They don't need to. However, some people feel that the roosters protect the hens from danger and will rush to the defense of the hens. From my experience they will rush to defend their hens but cause more problems than their worth if you're not planning on allowing any of the eggs to hatch.
