Go to Chinese Buddhist Vegetarian Restaurants. Absolutely no animal product. You should be able to find one in major city in US. If there's Buddhist Temple in city you live, you can call and ask for their recommendation of Vegetarian Restaurants.

I eat chinese food all the time, my cities places never put anything mysterious in their foods. The sauces, well, here's no sauce in what I eat only soya.
I eat Vege fried rice, vege rolls(no meat) Bean sprouts, and brocolli there.
I live in a small city so I don't have much options here-I can't be paranoid everytime I eat, I can only ask what the ingredients are and trust my own gut and what they say..Though, nothing to me taht I eat is much mysterious...

Well.. maybe I'm being naive, but I usually eat cheese filled won-tons, vegetable lo-mein noodles, rice (actually prefer steamed white rice to fried rice) tofu dishes, meatless egg rolls.. I love chineese actually.. I never thought that there might be something in the sauce...
There is this INCREDIBLE all-vegetarian chinese restraunt in Seattle Washington, though, called the bamboo garden.. everything on the menu is vegetarian!! I miss it so much (live on the other side of the country now)... I especially loved their "smoked salmon"(tofu and seaweed) and their "mandrin Chicken"(fake chicken in orange sauce)
Oh man, now I'm hungry!!
I did get some delightful sesame tofu from a local chinese restraunt the other day...

I either eat at all-veg places, or I find places that have a vegetarian (not vegetable) section on the menu. Where I live, there's acutally a guide to vegetarian and veg-friendly places that even come with warnings about whether I have to ask them to leave off the fish sauce.
And if I can't go to one of those places, I ask a lot of questions of the server.

Personally, I never go there anymore. Last time I ordered broccoli and rice and for some reason they put little pieces of chicken in it. And it's hard to tell what's in their sauces.

Exactly. Be very careful of these establishments. Only go to VERY reputable places and speak with someone there who knows what they are talking about.
