We will be asking other parents to bring food, drinks, supplies. I just have no clue how to estimate the amount of food, etc. to ask for. Teachers will be having their staff meetings during this time, so buffet style has been used in the past and we'll continue that this year. The theme of the luncheon will vary during the year, so if you have some good ideas, please share. We we're thinking about a baked potato bar and sundae bar too since these haven't been done before.

Say for example, you decided to make chicken fajitas (a simple catering idea during Mexican night). In this scenario 6-8 people will consume approximately 2 lbs. of protein and 4 oz. of "other fixin's"... So you'd probably have to make about 6 lbs. of cooked and sliced chicken and maybe a pound of onions and peppers. Don't forget the sour cream, guacamole, lettuce, mixed cheese and flour torts! (1 oz. per person, 2 torts per person). The baked potato bar is a GREAT idea btw.

This is a good site that has recipes that you can adjust for the size of the crowd you'll be serving. There is a box where they say how much the recipe serves. You can change the amount it serves to the amount you need. They will then adjust the recipe to the quantities you'll need.
