I need help to create tasty low salt low fat meals for my Dad. Even if you can just give me ideas i'd appreciate it.

Chicken breast with all the juices cooked out and vegetables. Plain Oroweat Oatnut bread and spring water.

Proteins- Normal intake of 50 to 60 grams.
Fats- Cholesterol is to be kept in low limits. Following fats have higher amount of saturated fatty acid. Animal fats- Pork, beef, meat.
Fats- Dairy products like cream, butter and ghee.
Oils- Groundnut oil.
Carbohydrates- Carbohydrates are responsible for endogenous synthesis of cholesterol and triglycerides. Hence excess is to be avoided.
Calories- Obesity burdens the heart. Reduction of calories help to lose weight.
Vitamins- Nicotinic acid reduces lipids in the blood. Adequate potassium and calcium in the blood is required to prevent arrhythmias.
Diet sheet:-
Early morning- Light tea 1 cup with minimum sugar and milk.
11 AM- Bread 2 slices with butter milk without fat.
Lunch- Chapatis 4 thin without ghee. Rice 1 medium bowl. Pulses 1 medium bowl. Salad as desired. Green leafy vegetables 1 bowl.
4 PM- Light tea without sugar.
6 PM- Any fruit, orange, Papaya.
Dinner- 3 Fulka. 3/4 bowl dal. More salad. 3/4bowl green vegetables.
Diet will provide about 1600 calories.

•Low calories diet to reach normal weight base on body mass index BMI.
•Eat Zero cholesterol, Zero saturated and trans fats, Zero oils Zero coffee/decaffein coffee, and Zero coconut milk.
•Low salt 1300mg a day or additional vegetable salt for hypertension only.
•Can eat all vegetable, fruits, beans, grains and some nuts, plus
•few serves of oily fish, shrimp per week or flax seeds as AHA recommends.
•Substitude meat protein by beans, protein powder from natural food stores, white egg without yolk, plain tofu, mushrooms and little brewers' yeast.
•and drink Lite red grape juice or beet juice.
