Earliest written know use of the phrase is from a novel in 1937:
[1935 A. J. POLLOCK Underworld Speaks 53/1 "He's bananas" meaning he's sexually perverted; a degenerate
The "go bananas" to mean go mad or crazy came in during the '60s

I guess it's because "fruit" used to mean crazy a long time ago. I'm not sure why.
Fruit cake, nuts, and flakes are also still in use as slang for "crazy" or whatever.
Many years ago, before I was vegetarian, my brother had a friend who was kind of effeminate and annoying, he claimed to be vegetarian but he ate chicken and fish. My brother said his friend "eats only fruits and nuts" and I said "you are what you eat." I was very young at the time and I wouldn't say something like that now.

I read somewhere long ago that bananas contain a very small trace of an hallucinogen which is harmless unless taken in massive quantities such as a tree full of bananas. Hence the expression "to go bananas," to go crazy.

actually no
back i nthe 1800s there was a tribe in the congo who had an odd genetic anomoly. appaently their DNA was fused with the DNA of a banana tree. when they would get angry or sad banana shaped appendages would grow on their body. green at first an yellow after a while.
they became known as the mexican banana people of the south congo suburbs.
crazy stuff.

i agree with the first answers..the monkey "theory" makes a lot of sense! also..a banana's odd curved shape and bright color is pretty nutty in itself and even the WORD "banana" sounds pretty silly hehe :o) xooxxoxo
