Just as acceptable as pasta, lasagna, pizza, etc. Not every meal has to have meat in it to be satisfying. And if you are vegetarian and are hosting, I'm sure they don't expect meat anyway!

No. if its the only starter i wouldn't recommend it.
If it comes after a meat/seafood starter as a breather then for sure.
eggplant as a vegetable is quite controversial. As a regular hostess i only include eggplant in the menu when there is at least one other Veg alternative in the menu. As your company comprises only of meat lovers, you can use it as a course alternative. meaning having at least one other meat item in that course.
May i recommend shrimps scampi with garlic bread as a starter and you can make a vegetarian dip or pate to double up the course.
