Pumpkin Swirl Cheesecake

25 NABISCO Ginger Snaps, finely crushed
1/2 cup finely chopped PLANTERS Pecans
1/4 cup butter, melted
4 (8 ounce) packages PHILADELPHIA Cream Cheese, softened
1 cup sugar, divided
1 teaspoon vanilla
4 eggs
1 cup canned pumpkin
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Dash of ground cloves

I'm looking for maybe good brands of the non-veg stuff listed that would hold up well in the recepie. Thanks!

You can use Toffuti 'Better Than CreamCheese' instead of the Philly & there are some good vegan margarines. We use Smart Balance-- but read the ingredients 1st, as some types of this brand have fish oil.
There are various egg substitutes, I use powdered EnerG egg replacer. It works best if you mix it with the right amount of water & whip it a bit with a fork til it's frothy. Some ppl also use tofu, applesauce or flaxseed but I don't have the amounts @ hand. I usually add a bit of flaxseed when I bake anyway.
If the Nabisco Ginger snaps aren't vegan you can either look for a similar cookie in the natural food store, or make your own.

Midel makes vegan ginger snaps. You can find them at most natural foods stores.

Use Earth Balance Spread or Willow Run margarine sticks instead of butter.

Tofutti Better Than Cream Cheese instead of Philly.

Ener-G Egg replacer (mix it before putting in the batter) instead of eggs.
