Lol at Oldknowitall's answer. Unfortunate, but true. That probably does play a big part in why it is so tasty. I also think that it is because much of Mexican food is corn-based (like tacos and tortillas), which gives the food a very yummy, tasty flavor. Also they use things like steak, chicken, pork, which are also very tasty. And can't forget the spices! The spices give the food a unique flavor. !Ay que sabor!

Most Mexican food is slowly simmered in a sauce for long periods of time. This allows for the food to absorb the flavoring of the sauce, making it, as you say, good.

One saying most cooks have is "Fat is flavor".
Mexican food uses a lot of fat.
For example, refried beans is made from beans and lots of added fat. When I saw it made from scratched, it suprised me how much was added. I'm talking cups!

It's our caulture. Chinese have great food because they have a culture to follow. Italian becasue they follow culture. American because in socienty we consider it "people" food. Hotdogs, hamburgers, fries, pizza
