I'm guessing that you don't want to use bacon, given this is in the vegetarian section... a few tips:
1) As people have said above, use a little mustard in the cheese sauce.
2) Make your own cheese sauce from scratch - make a bechemel with butter and flour. Infuse the hot milk beforehand with a bay leaf, onion and a couple of cloves.
3) Use good quality cheese - a good melting cheese like gouda or cheddar plus parmesan for flavour. Make sure you sprinkle a little grated parmesan on top too.
4) Try adding some mushrooms first cooked in butter with a grating of fresh nutmeg.
One great way to do it is to gently cook the cauliflower whole until just tender, then cut it into florets. Reassemble the whole cauliflower using the sauce as 'mortar'. Then sprinkle the whole lot with breadcrumbs and grated parmesan before baking until hot through and nicely browned on top.

I steam cauliflower, make my own cheese sauce with grated Mozarella, grated Cheddar and grated Jarlsberg. I mix cauliflower with sauce, put in an oven dish under the grill until it browns, cheese hardens a little as it does.
I serve it with garlic toasts. Family loves it that way.

Add some garlic butter to the cheese sauce and sprinkle some breadcrumbs over the grated cheese on top before browning - makes a nice crunchy topping!

As already suggested, a dollop of English mustard will bring out the flavour of the cauli and the cheese. Also, try veggie hot dogs (Tescos do them, as do Sainsbury's) chopped up in the sauce. Also, you could try some chilli crisps crumbled on top before you pop it under the grill.

I put Broccolli in with the cauliflower, and i sprinkle some grated cheese over the top (aswell as pouring cheese sauce over), then i brown it under the grill, its yummy. Oh........and it's nice if you put chives on the top too.
