Ginger Sesame Noodles with Broccoli
2 Tablespoons tahini (sesame paste)
1 Tablespoon light brown sugar
3 Tablespoons mirin
1/4 Teaspoon hot red pepper flakes
1/4 Cup tamari soy sauce
2 Tablespoons water
8 Ounces broccoli florets, cut into 1-inch pieces
12 Ounces linguine
2 Tablespoons toasted sesame oil
1 Tablespoon cold-pressed canola oil
2 cloves garlic, minced
2 Tablespoons minced ginger
Toasted sesame seeds or gomasio, for garnish
METHOD
Put the pasta water on to boil in a large covered pot. In a small bowl, combine the sesame paste, brown sugar, mirin, and hot red pepper flakes until well blended. Stir in the tamari and water until blended. Set aside.
When the water comes to a boil, salt it and add the linguine. Cook the linguine until it is al dente, about 10 minutes. During the last 5 minutes of cooking time, add the broccoli florets and cook until just tender. When the noodles and broccoli are cooked, drain and rinse with cold water. Toss with the sesame oil and set aside.
Heat the canola oil in a large skillet or wok over medium heat. Add the garlic and ginger and stir-fry until fragrant, about 30 seconds. Add the reserved noodles and broccoli, and the sauce, and toss to combine and heat through. Serve hot sprinkled with sesame seeds.
NOTES
Instead of linguine, this dish can be made with any variety of Asian noodle, if you prefer. Either way, it is a satisfying dish that is loaded with flavor. Gomasio is a blend of sesame seeds and sea salt available in natural food stores. It makes a delicious topping for stir-fried dishes such as this one.

I got one i had last night!

Boil some spiral, whole wheat noodles in a pot. Strain, And while still hot
Mix in some Veggie Slices (Vegan Cheese; Sold in walmart, The produce section)
Then add some carrots, broccoli, and mushrooms! Cook to desired texture/flavor and serve!
It's totally delicious.
You could also make "Pork" Stir fry using Tofu
Brown the tofu, mix in any seasonings,
Then add sugar snap peas, Bell peppers, and ontions.

My favorite recipe from www.vegweb.com:
1 block of firm or extra firm tofu, sliced
olive oil
1/4 cup nutritional yeast
2 tbsp flour
1/4 cup lemon juice
2 tbsp soy sauce or tamari
1 tbsp balsamic vinegar
chopped scallions
a couple handfuls Whole Foods "Stoplight" bell peppers (or 1/2 bell pepper, chopped)
capers
Saute tofu in oil until it begins to brown. Add nutritional yeast and flour and stir to coat, cooking a little more. Add lemon juice, soy sauce, and vinegar and cook until liquid is soaked up and slices are coated. Add scallions, peppers, and capers and cook until peppers are tender-crisp. Serve.

If you don't grow your own produce you aren't vegan. Commercially grown produce uses rendered animal parts as fertilizer. That's non-vegan. None of the recipes provided are "vegan" if you use store bought produce.
I'm sure the recipes are great but they aren't vegan if you didn't grow the produce yourself.

Mine is simple. I love mashed potatoes.
Mash russet potatoes using cream cheese and caned evaporated milk. Melted butter for the gravy. Salt and pepper.

A very easy recipe, that is super cheap, too, is sauted air. It's free. Breathe it in until satisfied. The big bonus is that NO ANIMALS OR PLANTS DIED in the process. Enjoy...
