I guess it just depends on what else you are putting on the sandwich.
If you are sticking with lettuce, cucumbers, and alfalfa sprouts (for example) a light colored cheese would be nice - provolone, white American or muenster.
If you are going to use tomatoes, various bell peppers and onions, you might want a stronger cheese such as cheddar, colby or co-jack.

Swiss cheese, brown mustard, a little mayo. Toast open faced in the oven, then add tomatoes, fresh spinach, thinly sliced cukes and top with the other piece of toast. Yum

Feta is good but it might be a bit too salty, so don't use mustard or mayo. Cooked spinach goes really well with feta in crepes and burritos. Add some lemon, dill and freshly cracked black pepper and it's delicious.

I'd like anything sliced reeeeally thin and layered in some grilled veggies. pepperjack keeps coming to mind, but I really love cheddars and goat cheese.
