Hello,
I am planning to make a recipe which asks for bulk Italian sausage-first I am wondering what it is exactly and, more important, second if there is a porkless replacement that would work just as well.

Gee, your question isn't what I thought it was going to be! I expected another meat troll.

You could use the Yves sausages if you smash them up, but you might do better using any of the 'breakfast' type sausage products and add a dash of fennel and Italian seasoning blend.

If you give more information on the recipe I could get a little more specific for you!

Bulk Italian sausage is roughly ground pork and spices that has not yet been put in a casing to make sausage links! I've never tasted anything that could be as good as pork in any recipe but I'd guess it would depend on what you're making.

You could also add Italian seasonings to vegan Gimme Lean Sausage. It has no casings & can be shaped or crumbled any way you like. Some large supermarkets carry it, as do natural food stores.
Just be sure you grab the 'Sausage' flavor instead of the 'Beef' which imo isn't that good.

"Bulk" Italian sausage is Italian sausage not put into the casing. You can get it at any good Italian deli.

I really doubt if you can find one without any pork. And I want to tell you that if you "replace" it with anything else it really will taste like crap. There are thousands of Italian family recipes, and I don't know of any that are "porkless".

I can tell you that only the very leanest pork is used---at least it was in my family--.

If it is the pork that you do not want you could use ground turkey, you will have to add fat to it such as butter (or groung meat) as well as seasonings. They do make turkey sausage that can be found at almost any store but again you will have to add some sort of fat to it (butter) to get the desired results from the recipe.
