For one many species of dolphins are on the edangered or threatened species list. Two dolphins, much like manatees, are make almost entirely of fat. They are considered a delicacy in some countries but most places don't have a high demand for them and they respect endangered species laws.

Actually people do eat dolphin fish. However, I think you are referring to dolphins the mammel. No, people do not eat them. Who would want to eat Flipper?
