No Fuss Beef Lasagna
1 can (14-1/2 ounces) Italian-style diced tomatoes, undrained
1/2 tsp. ground red pepper
1 carton (15 ounces) part-skim ricotta cheese
1/4 cup grated Parmesan cheese
1 egg, beaten
10 uncooked, lasagna noodles
1-1/2 cups shredded part-skim mozzarella cheese
Preheat oven to 375ºF. In large nonstick skillet, brown ground beef over medium heat 8-10 minutes or until no longer pink. Pour off drippings. Season beef with salt, stir in spaghetti sauce, tomatoes, red pepper, set aside. If using fully cooked ground beef, stir beef into sauce, add tomatoes and red pepper and set aside. Meanwhile in medium bowl, combine ricotta cheese, Parmesan cheese and egg. Spread 2 cups of the beef and sauce mixture in a 13 x 9 inch baking dish. Arrange 4 lasagna noodles lengthwise in a single layer. Place a 5th noodle across the end of the baking dish, breaking noodle to fit dish. Press noodles into sauce. Spread entire ricotta cheese mixture over noodles. Sprinkle with 1 cup mozzarella cheese and top with 1-1/2 cups beef sauce. Arrange remaining noodles in a single layer and press lightly into sauce. Top with remaining beef sauce.
Bake 45 minutes or until noodles are tender. Sprinkle remaining mozzarella cheese on top and tent lightly with aluminum foil. Let stand 15 minutes. Cut into 12 (3 x 3 inch) squares.
Italian Steak and Pasta
1 lb. beef top round steak
1/2 cup prepared fat-free Italian dressing
1 clove garlic, crushed
1/2 tsp. cracked black pepper
2 tsp. olive oil
2 medium zucchini, quartered and cut into quarters
1-1/2 cups sliced mushrooms
1 can (14-1/2 ounces) diced Italian seasoned tomatoes, undrained
1/4 tsp. crushed red pepper
2 cups cooked bow tie pasta
-- grated Parmesan cheese (optional)
-- chopped fresh basil (optional)
Place beef, dressing and garlic in a sealable plastic bag. Close bag securely, turning once to coat. Marinate in refrigerator 6-8 hours or overnight. Remove steak from marinade. Discard marinade. Press black pepper evenly into both sides of steak. Heat large nonstick skillet over medium heat until hot. Add steak and cook 11-12 minutes for medium-rare doneness, turning once. Remove steak, season with salt if desired and keep warm. In the same skillet, heat oil until hot. Add zucchini and mushrooms. Stirfry 2-3 minutes or until tender. Add tomatoes and red pepper. Cook 5 minutes, stirring occasionally. Add pasta and heat through. Meanwhile, carve steak crosswise into thin slices. Serve over vegetable and pasta mixture. Sprinkle with cheese and basil if desired.
Spaghetti & Meatballs
1 package (16 ounce) heat-and-serve frozen beef meatballs
1 jar (26-30 ounce) prepared spaghetti sauce
-- spaghetti or favorite pasta
-- grated Parmesan cheese
Microwave frozen meatballs according to package directions. Meanwhile, heat spaghetti sauce in large nonstick skillet over medium-low heat 10 minutes, or until heated through stir occasionally. Add meatballs to sauce.
Serve over spaghetti or other pasta sprinkle with Parmesan cheese if desired.
Steak Parmesan
4 frozen, fully-cooked chicken fried steak patties
3 cups prepared marinara sauce, warmed
8 slices mozzarella cheese
1/2 cup Parmesan cheese, grated
1/4 cup prepared pesto sauce
-- fresh basil, finely shredded
Prepare each steak according to manufacturer's directions.
Ladle 3/4 cup marinara sauce into each of 4 individual baking dishes. Add one steak to each dish. Cover each wtih 2 slices of mozzarella and 2 Tbsp. Parmesan cheese. Broil about 2-1/2 minutes, until cheese is melted and starting to brown. Top each with 1 Tbsp. pesto sauce, sprinkle with a bew basil strips
French bread or sourdough loaf, cut in half lengthwise in 6-inch sections.
Garlic Juice
Butter
THE CASTELLAMMARE DEL GOLFO METHOD
Melt butter and mix in equal amount of garlic juice with melted butter. Lightly toast bread. Spread melted butter-garlic juice combination on bread. Again, lightly toast until butter & garlic juice combination are slightly bubbly.
Serve warm.
French beans Italitan Style
Pick the beans that are no thicker than a pencil. Cut off the tips if you want. Boil them until almost done (not long; five minutes or so). Remove from pan and chill by running cold water on them. Let them dry a bit. Grate some bread crumbs. (Use good bread that has gone stale, not supermarket crumbs). Cook a clove of minced garlic in a tablespoon or two of olive oil. Add beans & mix well. Add bread crumbs. Turn up heat some & cook until crumbs are toasted. Add salt & pepper if desired. Use boby bianco green and brittle beurre yellow for a nice color contrast in this recipe.
Roasted winter vegetables
Peel some carrots & cut them into uniform pieces (leave them @ 1-2 inches long). Cut up 2-3 potatoes (leave the skin on). Peel & cut up some winter squash (1" chunks perhaps). Quarter 2-3 onions (or if you have any nice cippolino left, just add them whole. Put everything in a bowl. Mince a handful or rosemary & the leaves from 2-3 sage leaves. Add to bowl along with a few T olive oil, mix everything. Put in a roasting pan (try and keep everything one layer deep). Roast at 350 until the vegetables are soft in the middle and crisp on the outside.

Try some brushetta with a little olive oil & some parma ham & olives to pick at before doing a spag bol.
pack of lean mince beef, lightly brown with some onion - you can either add some worcester sauce or a glass of red wine (it makes the beef taste great) then add a jar of whichever dolmio sauce you prefer! leave for 20 mins while you cook the pasta - it doesn't have to be spag it can be pasta twists if you prefer. then when it's all ready top with some parmeson cheese.
End with a nice tirimisu - you can't go wrong & it's all so easy & accessible from sainsburys.

Italian beef and pasta
500g lean minced beef or 250g each lean minced beef and pork
1/2 cup finely chopped onion
300g frozen chopped broccoli thawed and drained
2 cloves garlic, crushed
250g penne, cooked and drained and tossed with 1 tablespoon olive oil
2 cups tomato and onion sauce
285g tin sliced mushrooms with liquid
1/2 teaspoon each salt, dried origanum and fennel seeds
1/4 teaspoon crushed chillies
2 cups coarsely grated mozzarella cheese
1/3 cup grated Parmesan
Preheat the oven to 180 degrees celsius
Saute the onion, broccoli and garlic in 2 tablespoons oil, butter or margarine in a deep frying pan over moderate heat until slightly softened - 3 to 5 minutes.
Add the meat, salt, origanum, fennel and chillies and cook stirring, until the meat is no longer pink, 3-5 minutes.
Mix in the tomato and onion sauce and mushrooms, bring to a simmer, and stir in the pasta.
Spoon into a greased baking dish.
Sprinkle with cheese and bake uncover for 35 minutes.
Serves 4

Go on-line and look up italian anti-pasti recipes (or something like that!). From what I gather, wou have loads of nibbles that are things like salted meats and olives and stuff like that. But you can then have different pasta dishes as well where you just ahve to make different sauces.
I'm not Italian so I hope I haven't offended anyone with my lack of grace concerning Italian food!
Or, ask your dad what he fancies to eat and cook him that. Sometimes a nice plain steak is just as good as a fancy-pants meal.

make salads and breads, with a lasagne main couse. It offers variety and is not just pasta based. If he is ill, he might not be able to eat much, so having a salad there could be just something light for him to munch on.
keep it simple, and I'm sure he'd rather have you sitting at the table than slaving in the kitchen, and don't forget a dessert

Sainsburys have a great range of Italian foods. I particularily like their tagliatelli carbonora which is done in a creamy sauce with mushrooms and I make it with steak. or you could add prawns if you wanted. Another recipe I make myself instead of the usual bolognese is garlic, prawns, passata(seived tomatoes),tomato puree, mushrooms., sour cream. Chop garlic fine, put in a pan with 2 tbsps olive oil, cook for about 10 mins, then add mushs 2tbsps tomato pureesome soured cream, cook until mushs are soft add prawns and simmer for another 10 mins, add extra puree if you want to thicken. In the meantime cook your pasta,, tagliatelli is nice and serve with sour cream .

Steak - (rib eye) cooked to his liking.
Home made fat chips or roastiz.
With peas sweetcorn and mushrooms, - or salad.
Strawbs, ice cream and double cream.
