It's a kind of conditioning, like with a scientist called Pavlov who associated ringing a bell with dogs salivating before they eat meat.

Basically your brain is excited that you're going to get chocolate and it likes it, so it increases the amount of saliva you produce from your salivary glands. It should not really hurt you though.
