Basically, sensors monitor engine performance and change the timing of the spark plugs firing (and injectors spitting fuel if used) to produce more power, smoother operation, or better economy.

This is a system where an eletronic computer often known as the ECU( engine control unit) controls the aircraft's preformance.
The main reason for this system's development is to allow the engine to operate at it's most efficent levels and parameters. The way FADEC works is when the pilot moves the thrust levers, the computer will determine the correct fuelflow N1 and N2 shaft speeds etc.
It is also being used on piston engines. Some control just torque some almost everything( RPM,Manifold pressure)
Just a bit of triviathe Electronic engine control(EEC) is controled by FADEC in PW engines and FADEC controls the Engine Control Unit( ECU) on GE engines.

With carburetors, the fuel mixture was governed by a big bunch of guesses. With newer sensors and increased processing speed, the ECM (electronic control module) or computer, can better regulate fuel/air mixtures for opium performance through all driving conditions.
