Safflower oil has the highest smoke point - about 500F (260C). The hotter the oil the more quickly the crust forms. This means less oily foods. That's why Frito-Lays uses safflower oil for their potato chips. Smoke point of canola (rape seed outside USA), sunflower,corn & peanut are about 450F (232C). Peanut oil is a monosaturated oil. All the others I've listed are polyunsaturated oils. Any of these oils will do nicely for frying most foods.

The key to frying, especially breads, is temperature control. Use a thermometer. Don't try to fry to many peices at a time because each piece will lower the frying temp. Keep the temp up as high as possible w/o getting to the smoke point. At the smoke point oils begin to change molecular structure and become less healthy to consume.

If you don't have a deep fryer machine then use a large saucepan instead.Crisco oil/shortening is good for deep frying.

Mini Doughnuts

Makes 20 doughnuts

1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 egg
1/3 cup sugar
1 teaspoon vanilla extract
1-1/2 teaspoons grated lemon peel
1 teaspoon lemon juice
1/3 cup half-and-half or light cream
2 tablespoons butter or margarine, melted
CRISCO shortening for deep frying

Combine flour, baking powder, and salt.
Beat egg, sugar, extract, lemon peel, and lemon juice until very thick in a bowl.
Blend half-and-half and melted butter; add dry ingredients alternately with half-and-half mixture to beaten egg, beating until blended after each addition.
Chill dough if necessary until easy to handle.
Roll dough to 1/4-inch thickness on a floured surface. Cut dough with a lightly floured 2-1/4-inch scalloped cutter and use a 1-inch round cutter to cut out centers.
Heat Crisco to 375ºF in a deep saucepan or deep fryer.
Fry doughnuts, a layer at a time, for 2 minutes or until golden brown; turn doughnuts as they rise to surface and several times during frying.
Remove with a slotted spoon; drain on paper towels.
Coat doughnuts with sugar.

They both are Just the thing for your health. If you eat both, you're better off. But yea, I'd personally choose fruits because they taste better.

It will depend on the fruit or veg associated with a comparison. In the event that you compare a farrenheit to a carrot, the carrot is the better of the two nutritional. But since you compare an avocado to the carrot, then your avocado is better. Equally the apple and avocado, are fruits.

peanut oil is good also at 350 degrees but vegetable oil will work too

I would try to make it as healthy as possible. Canola oil would be good, or sunflower seed oil.
