my mom is always trying to make different types of pasta with alfredo sauce, but its always really clumpy. when she first started making it, it wasnt so bad, but it just went downhill from there. i just ate and it and it was terrible, doesnt even taste like alfredo. i believe she uses milk, margarine, and maybe half and half. i am looking for a fairly simple alfredo recipe that i can make myself (i am 15, fairly decent cook, i guess) so i dont have to tell my mom hers isnt good. HELP!

Alfredo Sauce
There is an Italian retaurant that my husband and I just happened upon. It's the real deal, owned and operated by an Italian family. My husband loved their Fettuccine Alfredo, the sauce was so thick you could eat it with a fork. The restaurant is a good ways from home and he had a craving for it, so I looked for a recipe that might work, I found several different ones and kind worked from each one til I found the right combination. It was just what he was looking for so he had me write it down so I wouldn't forget the next time I tried to fix it. I'm bad about that, coming up with a new recipe and not being able to remember it the next time. Thought I might share it. Thick and creamy!!

1/2 cup butter
8 ounces cream cheese
8 ounces half-and-half cream
1/4 cup parmesan cheese
1 teaspoon garlic powder
black pepper (to taste)
Melt butter in sauce pan.
Add cream cheese and whisk as you add half & half.
Whisk until smooth adding cheese, garlic powder and pepper.
Simmer until heated through.
Pour over any pasta you choose, we even liked it on cheese tortellini.
Serve with a nice green salad, garlic bread, and a nice glass of wine.
Very filling!

Olive Garden Alfredo Sauce / copy cat recipe
Serves/Makes: 4 | Difficulty Level: 3 | Ready In: < 30 minutes
Ingredients:
1 pint heavy cream
1/2 cup butter
2 tablespoons cream cheese
3/4 cup parmesan cheese
1 teaspoon garlic powder
Directions:
Let the sauce simmer as long as you can! Please note the cream cheese is optional, we add it to aid in thickening the sauce. Olive Garden does not use cream cheese.
In a saucepan combine butter, heavy cream, and cream cheese.
Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder.
Simmer this for 15- 20 minutes on low.
You may wish to season with a little salt and pepper.
I have done this with half and half, but we prefer the heavy cream. I wouldn't try it with plain milk.

Just make a basic white sauce, add a little garlic powder, a pinch of nutmeg, parmesan cheese and black pepper. White sauce is a milk based gravy made with butter, flour and milk.

I suggest you use the green Search for questions section above and search for alfredo sauce. There's lots of good answers there and it's what I'm going to do on Sunday to have Fettucini Alfredo with bbq chicken or pork chops.

Store bought is no fail if you like creamy. Real alfredo is rather like tossing a salad: butter, cream, lots of Parmesan, no cream cheese, yuck...toss pasta. Add more ingredients according to taste.
