I have had califlower soaking in piclke juice for over a year now. I was wondering if it spoils. I have eaten some like a month ago and didn't get sick, it is well pickled and yummy!.

Did you actually pickle the cauliflower, or did you just put raw cauliflower in pickle juice?

If you didn't get sick a month ago and no mold is growing in the jar or the solution (if the solution is cloudy, it's got mold in it), then you're probably okay. That notwithstanding, I would recommend you finsh the cauliflower sooner rather than later and start a new batch.

The cauliflower I have turns blackish when it spoiles. The pickle juice will probably preserve it.
Did you ever try soaking hard boiled eggs in pickle juice?

If it's pickled, it'll last forever. My parents had some jars get pushed to the back of the cupboard and I didn't find them for 12 years. They're still perfectly fine. So I'm using them now and put this year's behind them in my cupboard.

Even pickled food will spoil eventually but it takes a long time.
