If I am doing bunch spinach, I put it in the sink, wash it well, put it into a strainer in the other sink, then, leaf at a time cut off the stem. I rarely chop it, and steam it whole, using the stems cut into short pieces with scissors to add to a soup, stew, or stirfry. If a recipe calls for chopped spinach, I solve that problem by buying a packet of frozen ready-chopped. It is just as good, just as nutritious, and the work is done.

cutting board, outside is a good suggestion, if no cutting board then lay down a dish towel, also individual ( i know it still makes a mess) leaves and then cut with scissors.
if nothing works just forget the mess and focus on the yummy spinach.
and by the way....ouch...30 cm for kitchen counter space...oh you poor soul , i couldnt even imagine

i stick mine in a chopping blender that does all the work for me. i just have to clean the blender
