I don't know why they aren't, but cats aren't mentioned in the Bible, either. Lions are but not domesticated cats, and we know that they were around in Bible times in that area. Similarly reptiles are mentioned in the Bible, but not dinosaurs. That doesn't mean that the writers of the Bible didn't know about dinosaurs or didn't 'believe' in them or that God wants people to act like they never existed, they just aren't mentioned.
I understand what you are saying, it does seem like a rather *big* thing to leave out, if you'll pardon my pun, but it is relatively meaningless. I mean the Bible doesn't mentioned oxygen, either.
Btw, you're not going to hell because you question the Bible. Don't let anyone tell you that.
EDIT: Some of the other answerers are right. There are some things in Job that may have been about dinosaurs. The Hebrew word has been translated to Leviathan in English, if I am nost mistaken.

the Bible doesnt mention 'dinosaurs' because this word was not made up until 17th century, i think. It DOES, however, mention large creatures that fit the descriptions of some dinosaurs. leviathan would be one example. hippopotamus that is described there looks more like a dino than a hippo (note the tail that is compared to a tree.. not a stick lol). i do know there's more, i just cant think of any right now. if you are really interested, go to
http://www.drdino.com/downloads.php
there's 'dinosaurs and the Bible' section. u can watch any server, 1 or 2, it's same thing, just recorded in different places. i'm tellin' ya, you'll never regret watching this. the guy explains exactly how the dinosaurs fit with the Bible, where they're mentioned, and a lot more about those cool creatures!

The Bible and dinosaurs. There are biblical references to unknown animals. For instance, a creature called "behemoth" is described in Job 40: 15-24. Behemoth (gigantic, Hebrew) is a massive animal. Some have attempted to say the elephant or hippopotamus is meant. However, the elephant and hippopotamus do not have a tail "like a cedar" (vs. 17). The book of Job is an ancient book, about 4000 years old. Behemoth could have been what scientists call Diplodocus, a huge plant-eater. Another apparently extinct animal is described in Job 41. It is called Leviathan (vs. 1). The description fits what scientists call Kronosaurus, one of the greatest animals to ever swim the seas. Leviathan was still around as late as the time of Psalms 104 (see vs. 26). Leviathan is said to have been in the oceans where the ships traveled (the alligator or crocodile does not satisfy the description of Leviathan).
All of the basic “kinds” of living creatures were brought into existence in the same initial creation week. Moses wrote: ”. . . in six days Jehovah made heaven and earth, the sea, and all that in them is . . .” (Ex. 20:11). This would include the dinosaurs (“terrible lizards”), and man as well.
Jesus affirmed that mankind has existed “from the beginning of the creation” (Mk. 10:6); this certainly excludes the notion that dinosaurs became extinct millions of years before man appeared upon the planet.
Humanity was given dominion over all the lower creatures of the earth (Gen. 1:26). There is no reason to exclude dinosaurs from the scope of this passage.

Regarding the Behemoth, and your attempting to discount a great description in God's word describing the Dinosaur known as Sauropaud. Did you not read Job 40v17 17He moveth his tail like a cedar: the sinews of his stones are wrapped together. Have you seen any elephant and hippo tails that resembled cedar trees? We are talking behemoth, much greater than that of the little whips of tails that flutter around on the hind end of hippos and elephants. Cedar tree - is huge.. In Job 41 we get a terrific description of T-Rex. T-Rex was nicknamed the "Air-headed dinosaur" because of all the hallow chambers in his skull. It's possible these chambers could have held explosive chemicals. 14Who can open the doors of his face? his teeth are terrible round about. The bible also descibes flying Teradactyls as dragons that fly. It's all there. Man was on the earth when these creatures existed some 4-6 thousand years ago. Gen 6v4There were giants in the earth in those days; and also after that, when the sons of God came in unto the daughters of men, and they bare children to them, the same became mighty men which were of old, men of renown.

The focus of the Bible is the relation of God and mankind. If a particular topic or detail is not relevant to the focus, it will not be there.
---
Is there (or was) life in Mars? or at any other planet beside Earth? Not relevant to the topic of relationship of God and humanity therefore not mentioned.
Is Pluto a planet or not? Not relevant, not mentioned.
Does Jesus preferred white or red grapes? Not relevant, not mentioned.
Dinosaurs ruling the earth? Repeat with me: Not relevant, not mentioned.
---
Edit: I do not thnk you end up in hell by questioning the Bible; at the end you may find Jesus. CS Lewis and Josh Mc Dowell found Jesus that way. I think you may be interested in reading some of their books:

The bible is not a history book about the earth and all previous life forms. The bible is a history book about mankind and how they fell from grace. And what God has done to restore that grace or better yet, what God has done to help mankind get back into God's good graces.
Don't assume that you are going to hell for questioning the bible. God expects that from honest inquiries. God wants you to know the bible. But in the end, it will be you and you alone to decide if its for you. God designed the bible for all. But it goes down to a matter of choice. But no, you will not go to hell for challenging the bible. There are greater matters to cause one to go to hell.
Here you will get a sense of how some people feel, whether in opposition to it or like me, in total acceptance of it. But I haven't closed the door to evolution. I believe that something happened to early mankind to bring him to that place of believing in God.

Why doesn't my history book teach me any mathematical formulas? Because that's not what it's there for. same with the Bible. Dinosaurs, and for that matter, history, isn't the point. The Bible tells us about Salvation and how th get it.
If you want to know about dinosaurs, ask Jack Horner.

The bible is a manual for humanity and how to live ones life. Dinosaurs have nothing to do with this. If Dinosaurs played a role in how mankind should live among each other or how mankind should serve God, I'm sure they would be mentioned.

I would guess its because the Bible was written by folks who had never seen a dinosaur, and probably had no clue they even existed. I also doubt the subject of dinosaurs would be on-topic for the Bible, which seems to be about God and His relationship with Mankind, not about the sciences.

Humans and Dinosaurs never existed at the same time, and nobody had discovered fossils (or did not know what significance they held) when the Bible was written. I hope that answers your question.
