We have a plum tree at our house and it has about a million plums on it. Does anyone out there know any good recipes with plum in them? It'd help a lot.

PLUM PRESERVES

2 1/2 lbs. Plums
4 cups sugar
1 cup water

Wash and sterilize canning jars before starting. Place in hot water so jars will be hot when filling (can use the same boiled water). Recipe may be doubled.
Wash plums well. Place into a large pot with sugar and water and bring slowly to a boil. A heavy bottomed pot works best and is less likely to scorch.

Continue stirring until all of the sugar has completely dissolved.

Turn to high heat and cook about 15 minutes (watch carefully and do not allow to scorch, reducing heat if necessary). Cook until it nearly reaches a gelling point, continuing to stir frequently. When mixture has thickened skim foam from the top.

Remove from heat and ladle mixture into hot 1/2 pint jars, leaving 1/4" of headspace. Tighten caps and process in a boiling water bath canner for 15 minutes.

Remove from canner, allow to cool where there are no drafts.

Do not tighten seals or touch lids after processing. Check seals after jars are completely cooled; if the domes are not down after 5-6 hours, put that jar into the refrigerator and use right away (do not store).


PLUM CHUTNEY

2 lb. plums
1 lb. carrots
1 c. vinegar
1 lb. brown sugar
1/4 tsp. cayenne pepper
1 tsp. salt
1/2 tsp. ground ginger
1 lb. dates, pitted and chopped

Pit and cut up plums; crack a few pits and take out the kernels. Grate carrots. Add the plums, kernels and carrots to the vinegar and boil steadily until soft, 40 minutes. Then add the sugar, cayenne pepper, salt, ground ginger and dates and boil for about 30 minutes or until thick. Pour into hot jars and seal.

APPLE & PLUM CRISP

1 c. flour
1 c. sugar
1/2 tsp. salt
Cinnamon
1/4 lb. butter
6 Granny Smith apples
6 red plums (Italian)
1 tbsp. cornstarch

Heat oven to 350 degrees. Combine flour, 1/2 cup of sugar and salt. Cut in butter until crumbly. Peel apples and cut into slices. Slice plums. Combine fruit with remaining 1/2 cup sugar and cornstarch. Put fruit in 9" baking dish. Sprinkle with cinnamon and crumb topping mix. Bake until top is golden and fruit is tender, 50 to 60 minutes. Serve warm or cooled.

This is my Aunt's Plum Cobbler recipe. All the family just love it.

PLUM COBBLER

Spray a 13x9" sheetcake pan or a 9" square cake pan
4-5 c plums - diced
1/4 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
3/4 c sugar
1 cube butter
1/2 c milk
1 c flour
1 tsp baking powder
1 tsp salt
1 c sugar
1 T cornstarch
1 c boiling water

Place the plums in the pan. Sprinkle with the cinnamon, nutmeg and allspice. Cream together the 3/4 c sugar and 1 cube butter. Add the milk. Combine the 1 c flour, 1 tsp baking powder and 1 tsp salt and blend into the milk mixture. Spoon over the fruit and spread out a little. Combine the 1 c sugar and 1 T cornstarch. Mix and sprinkle over the batter. Pour the 1 c boiling water over all. Bake in preheated 350º oven for 45 minutes or until golden.

The other thing my Aunt does with her windfall of prune plums is to cut them in half, place them cut-side down on a sprayed cookie sheet and put in the freezer until frozen. Then remove from the cookie sheet and put in a zip-lock bag. She then takes out what she needs for the cobbler or just cuts the pieces up in a nice fruit salad. She doesn't thaw them first for either thing. Both are very good. In the salad, it cools the rest of the salad down nicely.

Categories: German, Ethnic Yield: 16 servings 4 c Flour 3 Sticks butter or marg. 1 c Sugar 1 ts Salt 4 Egg yolks (save whites) 1 tb Vanilla 3 lb Purple plums (the little Ones) approx. Apricot or peach jam make a dough from the first 6 ingredients, press into cookie sheet with your fingers, forming a rim. Spread thin layer of peach or apricot jam on top of dough. Now put your plums (which have been quartered) in rows on the dough. Beat egg whites slightly and brush over plums, sprinkle two TBL of flour over egg whites. Bake at 375 degrees for 40 minutes. If too sour shake some powdered sugar on top. This can also be made in the winter substituting apples for the plums.

Plum Cake:
1/2 cup soft shortening
1 1/2 cups sugar
3 large eggs
2 cups flour
1 tsp baking powder
1 tsp soda
1/2 tsp salt
1 tsp cinnamon
1 tsp allspice
1 cup buttermilk
1 cup cooked plums drained and chopped

350 degree oven for 25 to 30 minutes

This is an old old recipe and expects everyone to know how to put the ingredients together in the proper manner.



UNCOOKED PLUM PUDDING

1 cup cooked plums finely chopped
1 cup grapenuts or rolled graham crackers
2 Cups boiling water
1/2 tsp salt
4 Tbsp Gelatin 2 Tbsp corn syrup
4 Tbsp fruit juice
1/2 cup sugar
1/2 cup finely shredded citron
1 cup raisins
1 Tbsp lemon juice
1/4 cup cold water
1/2 tsp allspice
1 tsp cinnamon
2 egg whites stiffly beaten

Soften gelatin in cold water. Dissolve in boiling water. Add all ingredients except egg whites. Mix thoroughly. Chill until partially set. Fold in egg whites. Pour into long shallow pan. Chill until firm. Cut in squares with sharp knife. Serve with whipped cream. 8 servings.
