Best of all, Hormel, Armour, Tyson and other brands have packages of PRE-COOKED beef tips, roast, pot roast, pork roast, chicken, ham, meatload. Most all come with gravy. They are very good and I serve them often. Use this for your meat dish and add vegetables, rice, or potatoes and gravy. You will find these packages near the meat section, they are not frozen. If you are only cooking for yourself, you can make two or more meals out of one package and freeze them for future dinners or lunches.
Tyson's fully cooked whole chickens are delicious. I serve them often with S&W canned sweet potatoes, Stove-Top dressing, microwave chicken/turkey gravy, a vegetable, cranberry sauce, and Pillsbury Microwave Biscuits which are better than I can make. A frozen pie defrosted and fully cooked. Perfect for one or two people at Thanksgiving or Christmas.

Spicy bruscetta chicken bake Ingredients 1 1/2 lb. boneless skinless chicken breast cut into bite-size pieces 1 cup shredded pepper jack cheese 1 14 1/2 ounce can diced fire-roasted tomatoes 1 6 ounce package Stove Top for chicken 1/2 cup water 3 cloves garlic, minced 1 tablespoon Italian seasoning, Dell'Aple recommended Big pinch kosher salt Pinch red pepper flakes Method Heat oven to 350 and spray a 9 x 13 pan with Pam Lay the chicken in an even layer in the bottom of the pan and sprinkle with the cheese. Mix tomatoes, stuffing mix, water, garlic, and Italian seasoning, salt, and red pepper flakes together until stuffing mix is moistened. Mound the stuffing mixture on top of the chicken and the cheese in an even layer. Bake 30 minutes or just to the point when the chicken turns opaque.

This good, quick, easy and comforting:
Mother's Goulash
1 lb. bacon
1 lg. onion, diced
1 lb elbow macaroni, cooked
1 can tomatoes
1 can rotel tomatoes
Brown bacon until crisp and crumble. Add onion and sautee until transparent. Drain bacon grease from pan, return bacon, add macaroni, both cans of tomatoes, sprinkle in some salt and pepper to taste, and cook slowly until thickened.
Really good with crusty bread and a salad with everything but the kitchen sink.
Meatloaf
2 lbs. lean ground beef
3 T. chopped onion
1 c. evaporated milk
1 c. oats
1/2 t. salt
1/4 t. pepper
Mix together, place in loaf pan, or shape into a loaf and place in large casserole.
2 T. Worcestershire sauce
3 T. vinegar
1/4 c. water
1 c. ketchup
2 T. sugar
Mix together, pour ontop of meatloaf. Bake at 350 degrees for one hour. Good served with mashed potatoes, green beans, or petite sweet peas.

Here are a few of comfort food recipes that I make when I'm strapped for time. I usually get about 4 servings out of these, but they're easily adjusted for more/less.
***Simple Sausage & Peppers
Cover 1 lb of your favorite sausage with water and bring to a boil. Drain sausage and cut into 1-inch slices. Pan fry the sausage for 5 min. You can drain out any fat at this point. Return to pan and throw in some frozen bagged peppers and onions. Cook till they're done, then add marinara sauce to simmer till heated through. I like to add sliced black olives at this point. Serve on sandwiches or over pasta.
***Italian Sloppy Joes
(I love to eat these with macaroni & cheese)
Brown 1 lb lean ground beef. Meanwhile, chop 2 green bell peppers and put them in a saucepan with a very small amount of water (about 1/8 cup). Steam them over low heat until they change into a more olive green color. Combine the beef and peppers with 1 cup marinara sauce; toss in some oregano and Italian seasoning to taste. Put the mixture in an 8x8" baking dish. Sprinkle parmesan cheese over the top, cover with foil, and bake at 350 for 30 minutes. Serve over split hamburger buns and eat with a fork.
***Easy Shrimp Scampi
Boil some angel hair or linguine. Meanwhile, melt 3 T. butter in a saucepan; add 1-2 cloves garlic. Add 1 lb raw shrimp and cook till the shrimp turn pink. Reduce heat to low. Pour in 1/2 cup white cooking wine. Add seasoned breadcrumbs, about 1/4 cup at a time, stirring, until the breadcrumbs soak up the butter and wine and you get a nice texture. Sprinkle with parsley flakes and serve over pasta.

Chicken noodle soup, Tomato soup.
Spaghetti, Linguini with alfredo sauce.
Bread and olive oil.
Stir fry.
Salad with wild greens and roasted pairs and a homemade oil-balsamic vinegar vinagrette.

Beef stew or chicken stew taste good. Eat with bread or pasta. When my husband is not feeling well, either i prepare soup or fish and vegetables.

To me the ultimate comfort food is chicken pot pie. I make it using store pot deep dish pie crusts, chicken, cream of chicken and whatever veggies you want. Yummmm!

Mac and Cheese Casserole
2 cups penne pasta
10 oz. container refrigerated Alfredo sauce
2 cups shredded American cheese
1 cup frozen baby peas
1 cup soft whole wheat bread crumbs
Preheat oven to 350 degrees F. Spray a 1-1/2 quart glass casserole with cooking spray and set aside. In large pot, cook pasta according to package directions until al dente, drain and return to pot. Add alfredo sauce, cheese and peas to drained pasta and cook over low heat, stirring frequently, until mixture is combined, about 3-5 minutes. Place in prepared dish and top with soft bread crumbs. Bake at 350 degrees for 20-30 minutes or until casserole is bubbling and bread crumbs are browned. Serves 4-6
Skillet Spaghetti
28-oz. jar pasta sauce
1-1/2 cups water
1 lb. frozen fully cooked meatballs
8-9 oz. spaghetti pasta, broken in half
1 cup grated Parmesan cheese
In 12" skillet, combine spaghetti sauce and water and stir to combine. Bring to a boil over medium-high heat. Add meatballs and spaghetti. Stir well, making sure spaghetti is under the sauce, completely covered in it. If necessary, you can add another 1/4 cup of water. Bring to a boil again, cover, reduce heat to low, and simmer for 20-25 minutes, stirring frequently. You may add more water or tomato sauce if the mixture appears to be too dry. Cook until spaghetti is al dente. Serve with cheese. Serves 4 to 6
Crock Pot Chili
1 lb. ground beef
2 onions, chopped
3 cloves garlic, chopped
2 (14 oz.) cans diced tomatoes, undrained
15 oz. can tomato sauce
1 Tbsp. chili powder
1 tsp. gorund cumin
1/2 tsp. dried oregano
2 (15 oz.) cans red kidney beans, rinsed and drained
2 Tbsp. cornstarch
1/4 cup water
Cook ground beef in heavy skillet until brown and drain. Mix all ingredients except cornstarch and water in 3-4 quart slow cooker. Cover and cook on low heat for 6-7 hours until vegetables are tender. Turn heat to high. Mix cornstarch and water until smooth and add to chili, stirring well. Uncover and cook for about 15 minutes, until slightly thickened. 8 servings.
Crock Pot Chicken and Rice Soup
1 lb. boneless, skinless chicken breasts, cut into 1" pieces
3 (14 oz.) cans ready to serve chicken broth
1 (14 oz. ) can ready to serve vegetable broth
1 onion, chopped
3 cloves garlic, minced
3 carrots, sliced
2 stalks celery, chopped
8 oz. pkg. sliced fresh mushrooms
1/2 cup long grain rice
1/2 tsp. dried basil leaves
1/4 tsp. dried thyme leaves
1/2 tsp. salt
1/8 tsp. white pepper
Combine all ingredients in 4-5 quart crockpot. Cover and cook on low heat for 6-8 hours until chicken is thoroughly cooked and vegetables and rice are tender. Serves 8.
Bean and Bacon Soup
2-1/2 cups dried navy beans
3 quarts water
8 slices bacon
3 onions, chopped
2 cups diced, peeled potatoes
1 cup sliced carrots
28 oz. can tomato juice
2 tsp. salt
1/2 tsp. pepper
1 bay leaf
Combine beans and 3 quarts water in large pot. Bring to a boil and boil for 2 minutes. Cover and let stand for 1 hour. Meanwhile, cook bacon until crisp in large stock pot. Remove bacon to paper towels to drain and crumble.
Add chopped onions to bacon drippings. Cook and stir until onions are tender. Add partially cooked beans and cooking liquid. Cover and cook over low heat for 1 hour.
Add remaining ingredients including reserved bacon pieces. Cover and simmer for 50-55 minutes, stirring occasionally, until beans are tender and soup is slightly thickened. Remove bay leaf before serving.
Crockpot Directions:
Precook beans, bacon, and onion as directed above (this step is necessary because otherwise the beans would never get tender because of the acid in the tomatoes). Combine all ingredients in 4 quart crockpot. Cover and cook 10-12 hours on low. Remove bay leaf before serving. 12 servings.
