Joanna, You didn't ask for mine but I'll share it with you anyway. WOW we love it.. I make it for special occasions because it is so rich.. Must way a ton when finished!! LOL

CARROT CAKE

2 cups plain flour
2 cups sugar
2 teaspoons baking powder
2 teaspoons soda
1 teaspoon cinnamon
1 teaspoon salt
4 eggs
1 1/2 cups Wesson oil
3 cups grated carrots
1/2 cup chopped pecans
1/2 cup chopped English walnuts
3 - (8 ounce) packages cream cheese
1 stick butter (not margarine)
1 - (2 pound) bag of powder sugar

Preheat oven to 300 degrees. Mix flour, sugar, baking powder, soda, salt, cinnamon. Beat eggs and add oil. Combine dry ingredients with egg mixture. Add carrots and nuts and pour into 4 greased/floured cake pans (8 or 9 inch) and bake for 45 minutes at 300 degrees. Cream together cream cheese and butter. Add sugar and beat well. ( I always let my cake cool for a very long time, sometimes overnight) When cake is cool, frost between layers.

when carrot cake first became popular, it was made with white flour ..... whole wheat was a variation .....but people seem to love the whole wheat, especially since carrot cake is often made with oil rather than butter, something people feel is healthier, so the whole concept hangs together ... and whole wheat is very good with spices and toasted nuts which go into carrot cake ... it is amazing, now I think of it: we never used black walnuts before recently ....they were considered too "zorchy" in taste ....no one wanted them, but now everyone likes them, and they really are good for you ......this is interesting: we really *are* starting to eat healthier foods today ....in fact, I think I'll just get busy and go buy some stuff for a carrot cake!!!!

Yep! I have never used wholemeal, I always use white flour.
