To roast a small beef cut is easy. Larger ones need better planning. please advise on such as 10 to 15 pound roasts.


Best temps (325 is great) but how many hours and minutes to a certain doneness?

As a general rule of thumb, 25 to 35 minutes per pound at 325F.

However, I would recommend using a thermometer to measure the internal temperature of the roast.

Depending upon the type of roast you can shoot for rare to well done based upon internal temperature.

Doness (Internal Meat Temperature)
Rare (140°F)
Med-Rare (145°F)
Medium (160°F)
Med-Well(165°F)
Well (170°F)

I don't cook by time. I use a themometer and insert it at the center of the roast to the center from the side. It will tell you exactly when the center is rare or medium rare, depending on your preference. Obviously the outer areas will be well, medium well, or well done. This is the most foolproof way to cook a large roast, especially a large prime rib. Perfect every time.

It is generally twenty minutes to the pound, and twenty minutes to heat through. This does not matter how large the roast is; of course you must see how well you like it too, so it could be a bit longer if you want it well cooked.
