Something that I can use so that I can use headphones with a device that uses composite cables.

Be careful here, you try to drive a headphone from an audio output designed to drive an amplifier.

Maybe. Preamplifier outputs are not designed to drive headphones. They may have very high output impedance and not have enough current capability to drive headphones adequately. Preamps with buffered outputs will probably work. There is a risk that the headphones will draw too much current and damage the preamp's output stage.
