Onion Gravy
English recipe traditionally served with sausages. Very good served with all types of poultry and game birds.

2 tablespoons vegetable oil
1 large onion, halved then sliced
1 tablespoon plain flour
12 fluid ounces chicken stock
1 teaspoon dried mixed herbs
1 teaspoon Worcestershire sauce

Heat the oil in a medium sized saucepan.
Add the onions and sauté until brown, about 10 minutes.
Sprinkle the flour over the onions and continue to cook, stirring, for 2-3 minutes.
Gradually add the stock, herbs and Worcestershire sauce and continue to cook until thickened.
Partially cover and cook for a further 10-15 minutes to allow the flavours to develop, stirring from time to time.

heat two tablespoons of olive oil. saute one medium onion until transparent. sprinkle two tablespoons of flour over the onions. stir and cook for three minutes. take two cups of chicken broth, vegetable broth, or beef broth, depending on what you're serving, and pour in gradually, stirring constantly. check saltiness, add ten twists from the black pepper grinder and some fresh herbs. i like thyme. if it's two thin let it reduce for a bit and it Will thicken right up. you can adapt this to many types of gravy. oh, if you want a darker color, you can add kitchen bouquet a half teaspoon at a time to get the color you want and it adds more flavor.

Put about 2 TBS. butter in skillet and 1 TBS. olive oil and saute' 2 Tbs. finely chopped onion slowly until it has come to a sweat but not caramelized then add 3 TBS. flour and stir that up a little bit. If you are having beef use beef broth and stir that in if you are having chicken use chicken broth and stir that in stir fast so you do not get clumps. Salt and pepper to taste. EASY You could use vegetable broth too

Saute 1 lg onion in butter till carmalized. add about 3 tbsp butter and 1/2 cup of beef broth. Add salt and pepper to taste. Let simmer for about 10 min. Add 1Tbsp cornstarch mixed with 1/4 cup of cool water. Mix well and let thicken.
