To cook artichokes, take a nonreactive 5-quart saucepot, heat 1 inch water and 1 tablespoon lemon juice to boiling over high heat. Stand artichokes stem side down in boiling water. Reduce heat to low; cover and simmer about 35 minutes or until a knife inserted in the bottom goes in easily. Drain.

Take off some of the outer leaves. Then snip all the rest of the prickers off with scissors. Then cut about an ince off the top revealing some of ther inner parts. Take a spoon and scoop in there removing the choke. This is the flowery stuff. Keep doing this til cleaned out. Then you can scrape down the stem a little by peeling back some of the tough skin.
Then Deep Fry in oil until crispy brown. Stuff with mixture of mushrooms, breadcrumbs, salmon, herbs, salt pepper. Then bake in oven for about 15 mins at 400 degrees.

Easy, just steam them. cut off about 1/2 in of the outer prickly leaves. steam them in about 1/4 cup of water w/a dash of lemon juice. When they are fork tender, pop out the choke (that fuzzy middle) and enjoy.

Steam them for about 40 minutes. If you are cooking more than one you might want to check on allrecipes.com I love them!!!!
