Use a very sharp knife on your tomatoes, and use a gentle sawing motion. Don't press hard.

slice tomatoes very thin, also the same with cucumber, make sure your lettuce is dried, too much water will make your salad wet, now, add some crisp bacon, crumbled, then some grated cheese, mix some lemon juice with the same of olive oil, maybe a tablespoonful of each, toss into your salad and serve at once, this is the way I make a side salad, you could add some herbs, maybe basil or marjoram, depends on what you have or what you like, the secret is taste, keep tasting untill you have the taste you want.

Tomatoes always fall apart when chopped up small but I just scrape all the bits into a bowl & it still tastes nice ! To make a nice salad I just add a bit of everything...iceberg lettuce, watercress, rocket, cucumber, pepper, tomatoes, onions etc then drizzle with a nice dressing.

lots of good ideas already...i sometimes just add the tomato last as its being served...dont put it in the salad to store leftovers. I also prefer cherry tomatoes whole...then individuals can cut it if they wish.
i like to add celery, red onions or green onions, fresh sliced mushrooms, and a few bean sprouts, and cubes of cheese or shredded. other ideas are any colour peppers, a sprinlke of fresh ground pepper, parmasean cheese, water chestnuts...good luck, i like all these and will use water ever i have on hand...if i have it all it is one great salad

I think you need to sharpen your knife.Or maybe a new one, also this time of year toms do tend to be softer and they do make a mess so it's not particularly your fault. If they are kept in the fridge that helps too.
Try - cutting and quartering them without cutting off the little bit from where the plant started to grow, that should hold it together better, - don't be put off,--- and you get my star for eating fresh.
Enjoy your salads.....xxx

Buy your tomatoes, slightly under-ripe and slice them top to bottom in thin wedges, then just halve the wedges by cutting across. Add various flavour-full leaves, such as rocket, watercress, nasturtium, chicory and drizzle with lemon juice and top with a sprinkling of freshly ground sea-salt and black pepper. For a more tropical taste add freshly ground nutmeg, cinnamon and paprika.

You can cut tomatoes easily with a bread knife, a knife with a serrated edge ....and you can peel them if you wish (before cutting) by lowering them with a slotted spoon into boiling water for a few seconds and then take them out, using the same spoon, and as soon as they are cool enough to handle, peel them, cut them in half across the center, turn them upside down and gently squeeze out the seeds .. cut them as you wish .... it is always nice to peel tomatoes for salad ...
For side salads:
set out my salad plates on the counter,
then put on them some pretty little lettuces and baby spinach, a little arugula
some slices of peeled ripe tomatoes (with the seeds since I like them), a few slices of English cucumber, and a vinaigrette made of red wine vinegar, a little olive oil and some crushed garlic, salt and pepper, tiny pieces of chopped red onion, basil, thyme, and marjoram, savory if you have it. salt and pepper
my favorite little composed salad is made of a layer of arugula, slices of tomato, thin slices of red onion, and fresh basil with a vinaigrette dressing with black pepper, lemon, oilive oil and a touch of salt, nothing else ....
there are garnishes for side salads, among them wedges of hard boiled eggs,
croutons,
asparagus tips
little anchovy fillets, rinsed
and you can turn a side / composed salad into a nice meal by putting it into the center of a dinner plate and surrounding it with devilled eggs filled with tunafish and mayo, garnish with a little parsley ....and
some sticks of cheese
some cooked asparagus
little carrot sticks
radishes, olives of your choice
and
plain toast points (about 8 of them, which would be two pieces of toast cut in 4 each)

try a sharper knife on the tomatoes . . . might help. i like to use shredded cabbage or fresh baby spinach sometimes instead of lettuce. whatever you do for salad, it's usually good. how about trying a new dressing to spice it up?
