That is called the Mud Vein. It is the equivalent to our intestines. If it ever breaks open, you will see a bunch of sand in it. Not really a big deal....but not a tasty thing to eat either.
Using a small knife, cut a slit down the back side of the shrimp in order to expose the vein. Gently pull the vein out w/ the tip of the knife. It usually comes out in one piece. Dispose of the vein and rinse the shrip again under cool water. Now you're ready to cook them in whatever way you wish.
As far as recipes are concerned, you could make some shrimp tacos. You can either grill them or pan sear them with some great spices. Just top your tacos as you normally would. It's quite excellent.

This is typically reffered to as the "vein" but it is actually the digestive tract. So long as the shrimp will be cooked there is no real health reason to remove it, however in larger shrimp it can get pretty gritty so follow these simple instructions to remove it:

Using tiny scissors (like barber scissors) look at the end of the vein which you can kind of sticking out from the cut end. Just insert one blade and go right down the body of the shrimp. The fewer snips the better. Dump it into a large bowl of water and get all the cutting done at one time. When you've got all the shrimp snipped, time to clean. Now, anybody that's ever done this out on the land that's tried pulling these things out they stick to everything. You can't get them off your fingers. So, what I do is I do this underwater. Just grab the shrimp, open him up. reach in underwater and just pull it out, take it over to the side and it will float to the bottom and you'll be left with a clean shrimp.

Wash the shrimp and with a knife take a small slit down the back of it where the black line is wash it out. Its the vein track.
For a delicious easy shrimp meal try this one:

ooops here's the recipe

1 1/2 pounds large shrimp (about 16 to 24)
1/3 cup butter
4 tablespoons minced garlic
6 green onions, thinly sliced
1/4 cup dry white wine
2 tablespoons lemon juice, fresh if possible
2 tablespoons chopped fresh parsley if possible
salt and pepper, to taste
PREPARATION:
Rinse shrimp and set aside. Heat butter in large skillet over medium heat. Cook garlic 1 or 2 minutes or until softened but not browned. Add shrimp, green onions, wine and lemon juice; cook until shrimp are pink and firm, about 1 to 2 minutes on each side. Do not overcook. Add chopped parsley and salt and pepper before serving. Garnish with lemon slices and parsley sprigs if desired.

You can serve this over thin pastas or with a side dish if rice.
Add a fresh, pretty green veggies to complete the plate.

It is called a sand vein and you just cut down the middle with a sharp knife and wash it out. I like to peek the skin off and saute' it in butter and garlic. It is very good that way served with or without a steak or a piece of chicken and a salad

It is the vein. Get a shrimp deveiner or use a good knife. As for a recipe, after cleaning the shrimp and deveining, sautee in a little olive oil and then put in a salad.

Yeah, get rid of that vein.

Easy recipe: Saute shrimp in olive oil for a couple minutes until pink. Mix in some basil pesto so the shrimp is coated. That's it. You can either make your own pesto or buy it in the store.

Yeah the one that goes down it's back. Make a slice down the back and it will pull right out. It's called de-veining. Yes it is poop.
I like to saute mine in butter,garlic,lemon/wine,and fresh parsley and serve mine over angel hair pasta.Topped with fresh Parmesan. (like a scampi).
