Here is Jesus Christ making the same point you are. You might also turn to 1st Corinthians 1:19-20 and see the apostle Paul stating that not many educated people are religious (in these cases Christian).
It is hard to be spiritual when money provides many easy diversions; and when education is a means to that financial acquisition

The Lord answered that when He said that it is easier for a camel to go through the eye of a needle than for a rich man to enter into the kingdom of heaven. It is not that the low-income people are more religious, but that the high-income don't think they need anything, especially a Lord to obey. This is a sad situation for the very wealthy. Nothing they have can be taken with them and only the Lord offers true peace.

Wow what an incredibly loaded question. The majority of the world live in what the western world would consider low income.
In the US middle to upper middle class are just as religious as the lower income.
People can on a survery claim they are religious, but it isnt necc true. Look at the higher crime rates in lower income populations. If those people claimed to be religious while participating in gang activity, would you really consider them religious?
Surveys can pretty much be worded to slant what you want to come out of them.
I can argue the fact easily that the less money you have doesnt necc mean you are more religious because you havent defined what being religious means.
And if you are trying to somehow make the point that less intelligent people are religious well that just doesnt hold either because majority of the people this world would have or do consider brilliant believe in a God.

The more attached one is to material things, the more hardened one's heart is to one's spiritual nature.
Those studies are proof to the spiritual blight of modern society and do not reflect some historical truth about the nature of humans throughout history. In other words, Historically - Kids were not as fat before junk food and video games were invented. Is it the kids or the junk food?
In America, Our institutions of higher learning are infested with Atheists that are infatuated with collectivism, despite the fact it fails every time it is tried. The same can be said about most of Europe.
Having a high income or a diploma from an American university does not make one a smarter person. Just as having a low income and being aware of your soul does not make one ignorant either.

maybe because they are in a situation that forces them to be more humble. and so they turn to God and find that peace and happiness.
and money doesn't buy happiness. just a false sense of well being if you're not happy to begin with. and i'm not poor and my faith is strong.

It's true, I just don't understand what your question is? The main reason this is true is due to the fact that churches tend to provide social services to poor people as a means to get them to join and this has proven to be a very successful marketing tool to the various organized religions.

It is that way because of a false and temporary
sense of self-sufficiency and nothing else.
It is just pride that gets in the way.

Because people that have "stuff" don't need God (in their minds) they have faith in their TV or X-box or whatever. Lose everything and its surprising how fast your mind turns to God

There is a strong correlation between economics and religion, as well as education and religion.
and the correlation is just what you'd expect it to be.
I saw a study that reported that 80% of those who lost their homes in hurricane Katrina claimed that it INCREASED their belief in god. How about them apples?
