I know I cannot afford it but is that a normal estimate. My insurance will only cover 800 of the 2000 bill

The teeth aren't impacted otherwise we could get medical to cover some of it

There is apparently no limit.

I had some dental work done earlier this month. While they were doing the big stuff the assistant said to the dentist "Did you see these new ultra-skinny needles we just got in for injecting deeply near roots?" He replied that he "would like to try one to put in some antibiotics" inside my gums. He did that and when I got the bill the one shot cost me $405.

Prices for dental services vary depending on your location. I'm in Utah and that prices sounds right. You could go an get a second opinion or look at CareCredit if you would like affordable payments to pay for the care you need. You could even get a second opinion. I know of doctors who refer out 98% of oral surgery cases. When you go to a specialist their prices tend to be more. I know of other doctors who only refer out about 5% of their oral surgery cases. A second opinion may find you a general dentist who would be willing to remove them and may be save you some money. I hope this helps, good luck!
