Verb "play" is "jugar" if you are reffering to use a toy or a game like Monopoly. Also for sports "jugar baloncesto" is "play basketball".
If using play related to musical instruments the translation is verb "tocar".
However, "tocar" most of the times means "to touch".

You say, "Me gusta tocar guitarra" if you use the article "la" your being more specific than general, here in Mexico, just saying "Me gusta tocar Guitarra" will do and you will be perfectly understood.

me gusta tocar guitarra or me gusta tocar LA guitarra is the way you should say it because if you say me encata... or me fascina then you are saying you love yo play the guitar
