Sure. I would suggest an escorted tour of Turkey. I've used PashaTours on 3 vacations. Comfortable modern busses, good motels, most of their offerings have nearly every meal included and unlike other tour companies there are almost no options. Turkey is a wonderful country and the people are friendly, and there is more history per square foot than anyplace else on earth.
If that doesn't appeal I would suggest a river cruise using either Vantage, Viking, or Uniworld. River cruising in Europe or in China offers a chance to see the country at about 10 miles per hour, great food, only about a hundred other guests, and side trips that aren't extra-price optionals. Much more comfortable than a bus and you only have to unpack once. Usually. There are daily trips so you don't escape busses altogether, but the ones I've been on have been uniformly very well done. There is a variety of onboard entertainment almost nightly, nothing like the big shows the cruise liners put on, but quite pleasant.

We had a great time in China. I hear the Shanghai is very nice. Travel in China is not that easy though. The flights are fine, but getting around otherwise is definitly an experience! Hireing a private car and driver would be best. Beijing is a bustling place with lots to see and do, but I would not call it a vacation hot spot. The polution is oppressive and its difficult to breath.
How about a relaxing holiday on the beach in Bermuda? Its not far from the US mainland. i don't know where you are, but its about a 2 hour flight from Newark and well worth it. The food is great, there is a fantastic nightlife in Hamilton as well as at many of the hotels. The sightseeing is really beautiful and you can't beat the beaches!
Good luck. Have a wonderful time.

The rest of Europe.
There is enough of Europe that you can not see even a small part in a few visits, so you have a whole continent to explore.
Most of the smaller towns and villages in Europe do not get many American tourists but they are sure worth a stay.
East and West Europe.
And while a bit far, Australia and New Zealand are great. (Maybe the destinations for your retirement travel.)

I got married in Belize and I loved it. We were on the island with the town of san juan. The country of belize itself is a 3rd world country but the people are very nice and don't bug you like in mexico. We went cave tubing, zip-lining and lots of snorkling. It was a great trip. I liked it better than Hawaii because it was not touristy. We stayed in southern belize for our honeymoon. In a town called Placencia at a bungalow resort owned by Fransis ford copalla. It was amazing and so relaxing and peaceful. Go on-line to Turtleinn.com to read about it and see pics. Another place I really enjoyed was Atlantis in the Bahamas. There is so much at the resort that you really don't have to leave it. I have been lots of places but mostly in Europe and I see you have covered that area also. Good luck.

Iceland is pretty amazing. Go on a walking holiday if you're up to it, it's unique.
Have a great holiday wherever you end up, but don't be too quick to say you're running out of active holidays - giving up is the beginning of the end!
