My family used to enjoy these immensely


BBQ Chicken and Black Bean Burritos

• 1 (15 ounce) can black beans
• 1 tsp olive oil
• ½ tsp garlic powder
• ½ tsp coriander

• 12 ounces chicken (white or dark meat)
• 1 Medium onion, chopped
• 1 tablespoon olive oil
• 6 ounces BBQ sauce
• 8 ounces pepper Jack cheese, shredded, divided
• 6 10 inch flour tortillas

Drain and rinse beans. Heat beans with garlic and coriander in olive oil, set aside.

Boil or bake chicken (if not already cooked) until no longer pink, about 15 minutes. Let cool, then shred with fingers.

Heat olive oil in sauté pan, add onion and cook approximately 5 minutes until translucent. Add Shredded chicken and BBQ sauce, stir fry until well blended.

Divide beans and chicken mixture evenly across 6 tortillas, top each with some of the cheese (use approx 4 ounces), and roll into burritos. Place in baking dish and spray lightly with Pam (helps keep the burritos from drying out).

Heat in 350 degree oven for 15 minutes, 20 minutes if refrigerated. Sprinkle remaining cheese on top and heat another 5 minutes.

If you like garlic this is the one for you... it is a one pot meal, very simple and you can bake it in the oven.
Has four simple ingredients...

You will need:
8 chicken thighs - boneless & skinless (cut fat off)
1 whole head of garlic
about a dozen 'small' red potatoes
3 cups chicken broth

--- okay... put chicken and broth in a large baking dish so all chicken lays flat... put in oven @ about 400 degrees, and let bake... consider sprinkling with salt, pepper and thyme, not alot, you can season to taste later. Chicken should be pretty much covered by the broth... if not, be sure to check and flip them regularly so they don't dry out from the oven.

when chicken is baking - you can wash then dice the potatoes into bite sized pieces. Set to the side.

Garlic... YES - this is ALOT of garlic... here is where you can do what YOU want... I use ALL of the garlic... I love it and have no heartburn afterwards... You can peel each peice and then put with the diced potatos... OR... just break the head of garlic up into the individual cloves. Peel off the extra flaky skin down to the one layer around each clove...

Put diced potatos and peeled cloves into the brothy mixture with the chicken... move stuff around so the broth pretty much covers everything.

Set kitchen timer for 30 minutes...
come back and stirr... if chicken or tops of potatoes are drying out, stirr up a bit and then maybe put aluminum foil over top.

Cook until potatoes are tender, garlic is soft, and the chicken is no longer pink.

If you start to run out of broth... add a bit of water... not too much, less than 1/2 cup but more than a 1/4 cup.

when it is done you can eat the chicken in whole peices, but I like to shred mine up to bite sized peices... like a garlic potato stew.

Good luck and enjoy... in spite of the garlic peeling, this is a very easy recipie to make.

Chicken & Spinach Bake

Boneless breast of chicken pieces
Season in greek seasoning. Coat with bread crumbs and pan-fry till brown on each side.

Baby spinach
Softened Cream Cheese
Black Olives
Take a whole bag of baby spinach and put on the bottom of a casserole dish.
Pour in the black olives. Put the softened cream cheese on top of the mixture and mash into spinach well.
Put the browned chicken on top of the spinach mixture.
Top chicken with sliced tomatoes, season with salt/pepper/olive oil and italian seasoning.
Top entire dish with a bag of Italian blend cheese.
Bake uncovered at 350 for about 25 min.

I made this and it turned out great!

my version of Dirty Rice:
2 cups of rice
4 cups of water
pinch of salt
hot pepper flakes
1Lb hot Italian sausage
1 green pepper
1onion
mushrooms
Garlic
(add rice and seasonings to water bring to a boil then simmer covered for about 20 minutes til all liquid is absorbed)
while rice is cooking in a skillet brown hot Italian sausage(remove from casing first so that it is just ground and seasoned pork)
Once browned set aside in a bowl
in the same skillet add 1/2 stick butter and 3 tablespoons oil
cut up 1 green pepper 1 onion 2 cloves garlic and mushrooms (or any veggie you like) and sweat til tender
once tender add meat back to skillet and keep warm til rice is done.
Once rice is done combine all ingredients in a bowl and enjoy.
I usually serve with a salad and biscuits.

Spaghetti with Polska Kielbasa

1 package Hillshire Farms Polska Kielbasa, sliced into bite-sized pieces
1 onion, diced
1 bell pepper, diced
1 can Hunt's Spaghetti Sauce (my favorite: Roasted Garlic and Onion)
16 oz box of Spaghetti
olive oil
butter/margarine/or substitute (I use Smart Balance)

Melt 1 Tablespoon butter in a skillet and add 1 Tablespoon olive oil. Heat over medium -to- medium-high heat. Add the Polska Kielbasa, and cook until it begins to brown. Turn heat down to medium and add onions and peppers. Cook until they are crisp tender or longer if you like them soft. Pour can of sauce over the Polska Kielbasa mixture. Cover and simmer until heated through.
Make Spaghetti according to package directions.
Great with a sprinkling of crushed red pepper and/or cheese (cheddar or Parmesan)

My family loves this recipe.

You can serve this with bread sticks and a salad.

It's called BOG (Basil, Oragono, and Garlic salt) pasta. Here's the recipie:
1. Cook some ziti pasta until tender.
2. Drain, then put it back on the stove with butter, Basil, oragono, and garlic salt.
3. It will all cook and end up delcious.
4. Enjoy!!!

Also, you could make lemon pepper pasta by adding lemon pepper insted of basil, oragono, and garlic salt. It's delicious!!!

honey garlic chicken...boil chicken, cube it and put into pot with crushed garlic and honey to coat...simmer for a while to let the flavours absorb.

stuffed peppers....brown ground beef with chopped onions, garlic, celery (all is optional) add some spagetti sauce to desired consistency and half cup cooked rice,j and salt and pepper to taste. meanwhile cut (and clean out) peppers length wise and boil 5 min then cool. add meat mixture with a little sauce ontop, add grated cheese, bake about 40 min.

Roasted potatoes with rosemary and balsamic viegar.
boil potatoes (cut into halves or quarters) for 5 min.
in a hot oven dish add oil and butter, onion, bay leaves , rosemary, crushed garlic, and potatoes. toss, then top with a generous amount of balsamic viegar...bake about 50 min...these are wonderful

a favorite around here is chicken in the bag....i forget who makes it, but it is found in gorcery stores usually with packages like stew mix or taco mix or other such flavour pouches...you can get pork beef or chicken...put the chicken in the oven bag with the powder seasoning provided and bake...excellent

hamburgers homemade with a package of onion soup mix and maybe a few dashes of hot sauce and worcestershire sauce.
