To some extent we need some saturated fats in our diet. esp the free fatty acids. And cholesterol esp the good ones, the HDL is needed for energy metabolism.

Your body needs fats to function properly. Nearly half of the dry weight of the brain is fat, and a quarter of this is cholesterol. Cholesterol is an essential part of sex hormones, bile acids, D vitamins and steroid hormones from the cortex of the adrenal gland -- among other important substances. Cholesterol does not need to be eaten, however, because the liver and other tissues can manufacture cholesterol from saturated fats. But too many saturated fats result in excessively high blood levels of cholesterol that can end up being deposited in atherosclerotic plaques on blood vessels, leading to cardiovascular disease. High blood cholesterol also depresses the immune system and thereby increases the incidence of cancer [*4]. Excessive blood cholesterol is more often caused by eating too many saturated fats than by eating cholesterol itself

The term blood cholesterol is actually a reference to HDL (High-Density Lipoprotein), LDL (Low-Density Lipoprotein) and VLDL (Very Low-Density Lipoprotein). "Lipo" means "lipid", a general term that refers to all biological fats and oils. HDL has been called "good cholesterol" because it can pick up excess fats and carry them back to the liver. LDL (and especially VLDL) has been called "bad cholesterol" because it can become so overloaded with fats that the fats are dropped on blood vessel walls rather than carried to the cells where they are needed. LDL could also be called "good", because LDL supplies cells with fats needed for structure and function. In fact, LDL is the main carrier of oil-soluble substances (like Vitamin E) to body cells [*5]. LDL-cholesterol is just HDL-cholesterol with a larger load of surrounding fat. Exercise creates HDL from LDL by removing fat from LDL for use as energy

Cholesterol and Fat are necessary and an important part of the Human Diet and Nutrition in moderation.
Why did you think it was not required for the body to intake and consume fatty products?
This is why vegetarian and especially the Vegan diets and lifestyles are so dangerous and scary when dealing with pregnant women and when forcefully imposed upon children.

EDIT: Ah....yeah...what she said except that fat itself is never consumed as energy. It is converted as all things are through and as part of the metabolic process and applied as Glucose or one of the proteins or Mineral Elements or Nutrient components etc....

I don't see anything in your posting that proves that saturated fat and cholesterol DON'T put one at risk for coronary heart disease and stroke. How can we make these claims that they do put a person at risk? Let me count the ways....Cardiologists, General Practitioners, all other Doctors, Nurses, Medical Assistants, Nutritionists, Personal Trainers, The American Heart Association, death of relatives due to Coronary Heart Disease, relatives and friends who have had heart attacks and strokes due to a blockage made up of cholesterol plaque, relatives who had and died of Artherosclerosis -- if you don't know what that is then look it up, relatives who have had a buildup of plaque containing cholesterol on the sides of their arteries who had to have a physician go in and scrape the plaque off the sides of the artery to allow blood to flow more freely, relatives who have had that same build up and the doctor told them to cut down on saturated fats and that build up went down after they did cut down on the saturated fats, ...... I could go on some more but I'm tired of typing
