Roasted vegetable soup. I don't have an exact recipe I just cook it according to my mood. First I core and peel a few tomatoes, add some diced onions and a few baby carrots (I don't bother to peel them) and I put all this on a cookie sheet and pour olive oil all over the mix, cover with foil and bake for 30 minutes. While that is baking I pour a carton of vegetable stock into a saucepan, add chopped mushrooms, a handful of pasta and some pepper, I don't add any extra salt, however, you can if you want. When the veggies in the oven are done I add them to the saucepan with soup stock and let that simmer for at least 15 minutes. I usually leave it there longer so I can eat soup off and on all afternoon. I like to serve this with crusty bread and a salad.
Edit: Oops! I didn't add at what temp to bake, it's 350 degrees

Cheesy Stuffed courgettes
Cut courgettes lenghtways in half, scoop out the middle and fry with an onion, garlic until soft, put the mixture back into the centres of the courgettes and top with cheese and grill

Vegetarian dish is the artichokes alla polita with sauce of corn flour, or arichokes with rice inside.
I dore also pepers filled with rice called dolma or with leaves those in italian are called''involtini''..I love also so much aubergine with red sauce and ober it white greek cheese in the oven..Notice..i cook all of them..
Then i invent also many things with pest sauce or balsamico...

avocado, cucumber, and carrot sushi with lot of wasabi.
to make it you need rice and you need to put rice wine(non-alcoholic) on the rice then you spread the rice on your sheet of seawead then spread some wasabi and then avocado, cucumber and carrot on and roll it up. then you you cut up the roll and when you eat it you dip it in soy sauce.
