There are too many to list, but if you go to the bookstore, there are several books with tons of recipes in them. One called the passionate vegetarian is quite useful and really thick.

Black bean taco are my favorite.
I don't really have recipes (amounts and such) but I will try.
I start with 2-3 cloves fresh garlic, 1/4 to 1/2 white onion chopped and various chopped peppers
saute for 4-5 mins in olive oil
add non drained can of black beans, add some cumin
cook for approx 8-10 mins
I then add taco seasoning with some water
cook until beans are slightly mushy (just not hard)...just keep stirring
serve on tortilla, top with onion, tomatoes and cilantro, maybe some taco sauce
mmmmm good
sorry it's not the best recipe form
i used the leftover for quesadillas, nachos and pizza

Here's my famous (okay, not famous worldwide, but amongst my coworkers, friends, and family) guacamole recipe:
* 3 ripe avocados
* very finely diced tomatoes (you can put in as much or as little as you want)
* cilanto (again, as much or as little as you want; more is better)
* 1/4 teaspoon of garlic
* 1 squeezed lime (use a real lime, not lime juice)
* very finely diced onion (optional and amount is similar to tomato. Put in as much or little as you want)
* jalapeno (not a lot; optional)
* splash of red wine vinegar (my secret incredient!)
* salt, to taste
Cut the avocados. Mash 2 1/2 of them in a bowl. Cut the last 1/2 up so you have diced avocado chunks in the guac. Add the other ingredients. Tastes best with Lundberg Farm rice chips (I like the pico de galo ones!) or you can always use a standard tortilla chip. This also tastes good in wraps, on veggie burgers, or you can add a little bit of olive oil so you can make a tasty salad dressing.

But really, the main idea that I use for cooking a meal for myself (I've been veggie for 3 years or so) is looking at a non-veg meal that I know how to make, and asking myself 2 questions: 1. What about it is not veg-friendly?; and 2. What is it about the dish that I like?
For example, I used to make lemon-pepper chicken with a side of mashed potatoes and a side of sauteed yellow squash and zucchini. I decided my fave aspect was the lemon-pepper seasoning, so I'll now mash up potatoes, cauliflower, and tofu with a bit of soy milk (or water) and vegan butter with salt, garlic, and lemon-pepper spice blend, and serve it with the green and yellow squash side.

most of my stuff would be side dishes, since i eat meat, but here goes:
green beans:
frozen or fresh and saute in a pan with bit of olive oil, salt & pepper and finely chopped scallions.
acorn squash:
cut in half. place in baking dish. cover with brown sugar, maple syrup and butter. roast in oven until tender.
veggie fried rice:
get fried rice mixes and add veggies....pease, carrots, broccoli...etc!
pierogies:
saute with butter and season to taste...salt/pepper/garlic....etc
sweet potato french fries:
slice sweet potatoes and fry in oil. season or dip in honey
mashed sweet potatoes:
same as mashed potatoes....add brown sugar to sweeten.

I like fried tofu. Take tofu. cut it into small pieces. fry the heck outta it. serve it with romaine organic lettuce. close your eyes and pretend t's anything other than tofu.
