My mom is almost 60 years old and a few months ago she started having palpitations. She only gets these palpitations while she's eating or afterwards. Sometimes there is coughing.

I had the same problem and told my heart doctor and he didnt have a reason for me to be doing it. I think its the full stomach pushing up against the diaphragm which puts pressure on the cardiac vessels which cause it.
Other than that, I dont know.

My girlfriend had the same symptoms with slight chest discomfort. She thought she was having a heart attack so she went to her doctor and he told her it was acid reflux.

Don't take these answers as a dx's. You should advise your mom to see her physician especially because of her age and any other possible problems ailments she may have. Just know that it may not always be as serious as we think, but check it out. Health comes first.
