My mother made the big mistake of telling her boss that the next time he visits she would cook him dinner. The boss and his wife like a little fancier food then my mom knows how to cook but that’s not the big problem the boss is on a very strict diet because of cancer. He can not eat sugar of any kind including carbohydrates and he stays away from package food because of the chemicals. My mom is really in a panic over this, dose any one know of a nice elegant meal that dose not have any sugar, carbohydrates and is not out of a box.

I agree with some of the other answers..ask the wife what fits his diet plan or check a restaurant and order dishes to serve.

If she really wants it to honest home cookin I would try an herb roasted chicken with steamed veggies and rice.If you have a grill this can work too for chicken AND grilled veggies.

Don't panic make the dinner more about the company and not the DINNER!

I wouldn’t make a menu just have dishes out in the middle of the table and have everyone pass stuff around and serve themselves. Things I would probably make are: Pot roast cooked w/ carrots, rice, corn, roasted onion potatoes, salad, dinner rolls (or cut French bread). For dessert I would offer coffee and tea with a store bought cake or pie (whichever looks better at the supermarket). Also don’t forget the appetizers you can buy box of mixed frozen appetizers that you just warm up in the oven. Maybe even have a bowl of nuts or chips and dip out. Oh yeah don’t forget the bottle of red wine.

You or your mom need to call the wife and find out what to cook for him. This happens often, do not be shy in calling her. She is probably worried that you will not cook his food correctly.

OR you and your mom scout out nice restaurants that have take out foods. Let them do the cooking and you two pick up the food and serve it. Restaurants like Red Lobster have take out (carry out).

A very long time ago, we went to a sit down dinner with friends and the one person who could not eat what we ate brought her own food. This man should do the same wherever they go.

For my first dinner party, I bought one of those pork loins that comes in a bag with marinade. You just throw it in the oven and it's perfect. I also served polenta rounds with marinara sauce and parmesan cheese on top and I sauteed zucchini. You could serve this and the boss could just omit the polenta. Everyone can't suffer because of one person's diet!

Maybe she could ask him or his wife what he would like for her to make for him?
What about baked chicken, steamed mixed veggies, baked tomatoes with feta, steamed cabbage.
Just tell her not to stress and do the best she can.

My advise is ring one of those catering companies that deliver ready cooked gormet meals. let them worry about choosing the right meal for his conditions just select from what they suggest.
