I have to eat breakfast because I am diabetic, but I am having difficulty in finding anything savoury! I do not want to be cooking bacon and eggs every morning, and scrambled eggs - there is a limit as to how many times you can do that.

Why are there so few recipes for breakfasts written down anywhere? I just want some ideas quick, savoury and not too fatty! Help please

You could have porridge the Scottish way (salted):
4oz Oatmeal, 5 fl oz (skimmed) milk, 1 pint boiling water,1 level teaspoon of salt.

Mix oatmeal and milk together to form a paste, then add the boiling water. Heat and simmer for 15 minutes, stirring occasionally. Stir in salt and serve.

Oh and a really easy thing to do which is so good is Black Forest ham on a slice of Vogel's bread toasted. It's soooo good. Seriously.

As an Ulster man I would firstly have to recommend an Ulster Fry (Eggs, Bacon, Sausages, Potato Bread, Soda Bread, Wheaten, Mushrooms, Beans, Black Pudding) Perfect hangover cure and will fill you up for the day.

My favourite at the moment is what I call an Breakfast Bread Ring -

Make a basic bread dough, allow to prove and roll out to 1mtr length, 20cm wide and a depth of about 1 cm.

Boil 8 eggs to a runny centre consistency, then de-shell

Drizzle bread with olive oil

Lay Parma ham onto oiled bread

Place whole eggs evenly over ham

Sprinkle over, sun dried tomatoes, basil, lots of Parmesan or pecorino cheese, olives (optional), black pepper and a little salt. (remember parma ham has quite a bit of salt already).

Drizzle over a little more olive oil.

Roll one side of the bread onto the other and pinch the edges to seal forming a log shape with all the lovely ingredients captured inside. Pull the end of the roll around to form a ring and place on a baking tray.

Bake in pre-heated oven at 190 C for 20-25 Min's until bread is cooked, slice open between each eggs and ENJOY hot or cold.

Yes a bit of preparation and work involved but totally worth it.

Grillled halloumi cheese in a warm pitta bread,

Or, how about a Continental breakfast? Just a hard boiled egg, slice of ham, slices of cheese, a tomato, a few slices of cucumber and a slice of toast? Light, not too fatty?

How about kedgeree? Smoked haddock with hard boiled eggs and rice? ( you could prepare this the night before)

Kippers? Yeah, I know the smell is hard to take first thing in the morning, but its savoury, and they're nutricious too!

French toast? ( or eggy bread to use its common term!!)

I think if you go to Tescos website, they have some recipe ideas for diabetics!

Certainly proper porridge and kedgeree, as mentioned in previous answers. For summer though, try the recipe for Sopa de Ajo Blanco on

It is a cold soup made with ground almonds, breadcrumbs, garlic and grapes. You can add as much or as little garlic as you like. (I tend to use a whole bulb, being a pig for garlic and not caring if I stink of the stuff). Sounds weird but it is wonderful with French or any crusty bread. Most recipes tell you to use water or chicken stock. Water is probably a little bland, and I am a veggie, so I tend to use the Marigold Swiss Bouillon Powder. However, any light flavoured stock cube will be fine

Mashed egg sandwich. They can be prepared the night before. Just heat up for a min or 2 in the microwave in the morning. You can also swap the egg for sausage and cheese

Oatmeal. They take just a few mins to cook and can be eaten sweet or savoury.

Fried rice. I'm Chinese so we always have rice for dinner and there's usually some leftover. My mom sometimes fried it up at night for me to bring to work the next day.

How about Kedgeree? A dish that originated in India in colonial times. The basic ingredients are smoked fish, rice and onions.
For recipe go to Yahoo and tap in Kedgeree. You can substitute low fat yogurt for cream and omit eggs if you want to

The good thing is you can make a batch and freeze individual portions that reheat in the micro waive.

How about bagels with something. My boyfriend is type 1 diabetic and he regularly has bagel with scrambled egg and salmon. Althernatively try poached eggs or boiled eggs with soldiers (sorry Im a kid at heart!). You can get microwaveable sausages that are really nice, I think they are from Walls. How about those with scrambled egg or poached egg or in a sandwich or on toast?
