Slice it up, rinse it off, add some salt and/or lemon.
My dad always said if you cut off the ends and rubbed the cut off part on the end of the cucumber, it takes out the bitterness, but I think that's a myth, because it doesn't do anything for my cucumbers...

Cut the end the cucumber was attached to the plant by. Rub the two cut pieces vigorously for a few seconds.
I know it sounds like an old wive's tale, but it works. The rubbing creates a suction that draws out the creamy juice to the cucumber that causes bitterness. Don't take my word for it, though. Try it! You cut that end off anyway. If you get a batch of cucumbers and one is bitter, try this method and the rest won't be.

An old Italian custom was to cut the ends off the rub them against the remaining cut end of the cucumber.
Actually, it's the skin that can be bitter. Peel it and see if that works.

get a new cucumber. Some varieties have more of a tendancy to be bitter, try a different kind just a different cuke.
If you need to use it then season it with salt, vinegar, and maybe a little sugar.
Usually cucumbers get bitter the more they mature, so get smaller ones that haven't started to turn yellowish on one end.

Cut off both ends. Take each of the cut off parts and rub them against the spot where you cut them from. Do this about 10 to 20 times for each end. That usually helps.

I don't notice a bitter aftertaste in cucumbers, but you might try peeling them and then salting them until they "sweat", then rinsing them and tossing them with a vinagrette of seasoned rice wine vinegar, sugar, and oil.

after peeling off da cucumber cut a thin slice at da top n rub it wid da whole cucumber.......
ull c sum white poisonous thing ..........its dat which is actually bitter..........n den wash it off.........

What my grandma taught me to sprinkle a little bit of sugar on it and let it soak in. My grandma is rather old. But it worked for me.
