Velveeta will melt very easily for cheese dip. Or else any kind of shredded cheese you like. If you use a harder, more dry cheese, you might have to add a little milk to get it creamy -- just a splash at a time until it has the right consistency. Heat it in the microwave for a few seconds at a time, constantly checking and stirring it, or on the stove over *low* heat (also stirring). Have fun!

Some of the better melting cheeses if you are making a dip or fondue are Fontina or Gruyere. Melt it in a non stick pan if at all possible. Use medium heat, because you don't want to burn it. Add a little heavy cream to smooth it out.

You can use plain cream cheese for dips, warmed.
Or stir in a little sour-cream to soften, & add herbs/spices.
Most soft cheeses will melt readily: Brie, Camembert,
Mozzarrella, American, Colby, young cheddar, etc.
Don't used hard aged cheeses by themselves.
However, you can make a cheese sauce:
Scald some milk (bring just to bubbles around the edges).
Add grated older harder cheeses, stirring constantly:
Cheddar, Asiago, Parmesan, Romano, etc.
