Soak apples slices in apple juice until ready to use. The acidity in the apple juice prevents the apple slices from browning and doesn't change the flavor of the apple.

Keep oxygen away by submerging the pieces immediately in water. Or use apple juice to prevent changing the flavor. If you are going to cook them coat cut surfaces with lemon juice.
I just eat them whole.

Most acidic citus juices will keep them from browning. Toss the apples pieces together with some fresh pineapple or oranges and they sould stay fresh.
